I thaught about it from the 1st second I saw the "smokint setup", the meat was literally above the fire... You don't smoke it at high temperatures like that.. you instead cook it slow and at slow temperatures..

I love this channel but I would like to see a smoked brisket that actually gets slow smoked. Placing the brisket above direct heat just makes this cooked over wood flame.

Ordinarily my mum would not go for cooked meat that is still pink/red in the middle, don't worry it's just her. We've argued over it for decades so now I just keep quiet when I see a really good steak cooked to perfection. I'm a medium rare guy.
That looks divine, even when cooked through it's still juicy and tender..... I had a big dinner earlier and now I'm hungry again..... damn it that looks so good.
Brisket is very different from steak. It is actually a tough cut of meat with lots of collagen. The point of cooking it "low and slow" is to allow the interior to cook thoroughly to around 205-210 F without burning the exterior so that it retains the juices and is fall apart tender at the end. A "medium rare" brisket cooked to 135F would likely be inedible.
The filter used made me think I'm watching a horror film or something. Anywho, I'm hungry now

Might I recommend rubbing it with a yellow mustard before slapping the rub on? The vinegar in the mustard will help to tenderize the meat. You will not taste the mustard.

Interesting way of cooking a brisket flat. I know time constraints can be challenging with a UA-cam video. But did you slow cook that over a low coal bed? Or fast cook it with high heat like a charcoal grill?

I don't know if this helps but the Red Meat Mix has - Sea Salt, Lemon Peel, Black Pepper, Smoked Sweet Paprika, Brown Sugar, Hot Paprika, Star Anise, Cinnamon and Cloves.
