Therefore I made this video and a small guide to my most favorite herbs and spices plus some tips and tricks on how to keep spices at your home.

    謝謝小胡這麼用心製作視頻,回禮附上我個人的中式簡單香草小私房料理(很下飯的),這集真是我的最愛~香草,羅勒跟九層塔,有點類似,切碎用成烘蛋,或是海鮮湯中加入,非常美味;香草食物真的非常美味,還能作成香草茶跟製作蛋糕、麵包、餅乾,增添風味。
    香菜也是亞洲做菜常用的,香氣濃厚,還非常刮肚子的油~
    簡單香草小私房菜:
    🐣迷迭香香煎雞胸肉也非常美味
    準備一個乾淨的玻璃保鮮盒
    1️⃣2塊雞胸肉切成小塊(一口大小)
    2️⃣少量切碎的迷迭香,(新鮮or乾燥)都ok,風味不同,我偏好新鮮
    3️⃣5~6顆蒜頭切碎(依個人喜好,蒜頭多點比較香)
    4️⃣醬油膏1~2大匙(依個人口味)
    5️⃣幾滴麻油
    6️⃣將1️⃣~5️⃣材料拌勻,放入保鮮盒,醃漬5小時左右,即可使用,放置一夜更入味。
    7️⃣不沾鍋小火熱鍋30秒,再放入一些橄欖油(比炒菜量稍多點就好)+幾滴麻油,用夾子放入醃好的雞胸肉(醃料附著的湯水盡量瀝乾),先中大火雞胸肉反白微焦,再翻肉塊,2面煎至焦香後,轉中小火,倒入保鮮盒醃料中的湯汁,煮沸拌炒稍稍收汁,即可出鍋。
    為了隨時有新鮮香草茶 ☘,為了製作天然化妝水純露,我從一小盆5吋迷迭香。。。。發展到了頂樓小花園。。。。種香草的不歸路呀🌿

      I think many people are used to just follow recipes and use herbs but after a while it is great to know herbs and change flavors of dishes yourself.

    中華或西方料理普遍都先爆香蒜頭打底,洋餐也經常爆炒洋蔥,增加香氣。若要提味,加入蒜粉不失為簡易可行方法,作用類似味素、雞精與膏湯等。

    This is a really helpful video. I just started to cook in U.S., and I planted some fresh herbs I often use in home. I also planted parsley, thyme, mint, and dill but actually don't know how to use them lol. I think those parsley you saw Chinese use a lot is 香菜 (Coriander), rather than really parsley. They are very close, but the parsley's flavor is stronger in my opinion.
    Asian don't use Genovese Basil that much but we use a lot of Thai Basil, Holy Basil, and Lemon Basil, which bring more rich flavor and worth to try.

      I am glad my video could help you! 😊 Fresh chopped parsley is a standard garnish for many European dishes, fits very well with all kinds of meats. Thyme is great for chicken but also has many other uses. Dill is delicious with fish. You can see me using some of these herbs in other videos. I also like coriander and thai basil! ☺ Which is your favorite dish with thai basil?

      @@WhosHU I am a Taiwanese. There is a famous Taiwanese dish call 3-cup chicken, which are 1 cooking rice wine, 1 sesame oil, and 1 soy sauce. This dish has rich flavor, and we use a lot thai basil to balance it in the end.

    10:24 在華人地區應該叫做草荳蔻或草果,是薑科植物的種子(香味來源是其堅硬的果皮)
    是屬於比常用的竹薑還要更溫和的香料
    跟肉荳蔻沒有任何關聯
    每個產地可能會因為品種不太一樣而香氣大相逕庭
    而其內部可能會有帶膜狀的片狀物體以及圓形黑色種子
    如果烹飪前果皮出現明顯裂痕甚至掉出種子的,最好將其內容物全部去除只留外皮,
    因為有些品種的種子藥性有點強不適合當香料,沒有處理也不要整顆下去打成粉
    其他香料也是,這樣賣就怎麼用,最好別輕易打成粉

      Mostly when a chef says "season to taste" it means add salt (and often pepper) to your liking. Everyone has different taste for saltiness of food, therefore it's easier to let people decide themselves.

    Parsley can be found in China, but the "parsley" you found in Chinese dishes are probably cilantro

      In some restaurants in China, people do like to use parsley to decorate the plates and of course they use cilantro to decorate the taste of the dishes.

    Coriander is popular in Chinese food, but not parsley. They look similar, but different taste.

    how abt chives? you probably know chinese chives which is 韭菜. The chives is much smaller than chinese chives, and it has a savory flavor. How to use it on food? Thank you Xiao Hu!

      In Austria we use fresh chives for many things. Most often it is used freshly to decorate a soup or other dishes. Also sometimes it is added into dumplings, fried potato or salad. Personally I love to put it in home made herb butter.

    小胡,plzplz说说Oregano(Origano)吧。我去希腊吃到了正宗的希腊沙拉,我觉得Oregano是这道沙拉的灵魂。回意大利后却发现不是所有超市都有这个香料。

    Now I realised difference between parsley and flat-leaf parsley. I grow some flat-leaf parsley and always thought they are parsley lol

      The flavor is very similar. Flat-leaf parsley has a slightly stronger flavor. Regular parsley looks a bit nicer for decoration.

      Yes, I prefer to use flat-leaf parsley because they are much more tasty.
