Moms Creamed Yellow Squash and Onion

  • 4 yellow squash chunked up
    1/2 cup diced onion
    1 Jalapeno (not hot variety)
    1 tsp cardamon
    1 tsp celery salt
    1 tsp dill weed
    1 tsp pepper
    Saute 3 tbsp olive oil - onion, spices and pepper, de glaze the pan 1 cup water, add chunked squash add enough water to gently cover squash, Cook till almost so tender to fall apart, cream with spoon, add 3 tbsp corn starch to 1 cup milk stir well, if need use a mesh strainer to catch any corn starch white flakes.
    Continue to cook till liquid thickens to turkey gravy consistency. Let set and thicken more and serve with corn bread.

    Glad to hear mother is doing better. I too have had ulcers, very painful. To me there is nothing better than fresh vegetables. God Bless.

    I never thought about using the frozen onions. My eyes water terribly when I chop onions so I’m going to get some of the frozen next time I go to the market!

      It is so easy, and one reason I started using the frozen and in the business it saved time chopping big sacks. But great!!! ❤

    You have shown me a way of eating squash that I’ve never seen before! I will certainly give it a try. I bet a sprinkle of chopped bacon on top of the individual servings would be delicious. Thanks so much for your time and talent in the kitchen….😁

    Yes Gene, this world has gotten really spooky! I work from home which is nice. I go out to get gas, to the grocery store, walgreens, the liquor store and to visit family. That's about it. I don't like going to the movies or out in crowds. You never know when someone will start shooting. Thanks for sharing this recipe I will definitely be trying this!

    I pray that your stomach ulcers will heal. I will have a bout of diverticulitis occasionally. I won't eat anything but maybe some plain mashed potatoes for 3 or 4 days until it gets straightened out again. It always does, thank the Lord. Squash looks delish!! Bon appetito!

    A few days ago someone gave me some yellow squash & zucchini. I donr have the stuff I need to make a casserol so this is perfect because you said you could make this and then freeze it. I will be trying it first because I may like it better than the casserol. Any ideas what I can do with the zuccimi?
    I hope you get to feeling better I do enjoy watching and learning to make the same food grandma used to make. My poor moma couldnt cook but I still loved her cause she was mama! Thank you!

      I make zucchini bread, a thing I grew up on if we had too many squash, a good bread with great properties.
      Zucchini Breakfast Bread is a favorite, I had to find the recipe for you!!!
      I don't usually post recipes, but think everyone needs to try this bread recipe...especially if you have zucchini not being used.
      Hope you try this.
      3 eggs
      2 cups sugar
      3/4 cups vegetable oil
      2 cups flour
      1/2 teaspoon baking powder
      2 teaspoons baking soda
      1 teaspoon salt
      3 teaspoons cinnamon
      2 cups zucchini grated
      3 teaspoons vanilla extract
      1 cup pecans chopped
      1/2 cup raisins
      Preheat oven to 350°F and grease and flour a bundt pan. You can also use non-stick baking spray.
      Combine eggs, sugar, and oil with mixer on medium-low speed.
      Add flour, baking powder, baking soda, salt, and cinnamon and continue mixing.
      Squeeze moisture out of the grated zucchini, then add to batter with vanilla extract and mix.
      Stir in raisins and nuts by hand.
      Pour batter into your prepared bundt pan and bake at 350°F for 45 minutes. Bread is done when a toothpick inserted comes out clean.

    I'll have to try this recipe. I make a green zucchini casserole that's one of my favorite dishes. I've never eaten the yellow squash. Does it taste similar to green zucchini? Hope you feel improved soon!
