    Poor Man's Lobster! (Tomahawk Resort Ontario Canada)
    In a large pot put 5 or 6 cups of water.
    Add 2 tbsp. salt (sea salt or kosher salt)
    Add 1 cup of sugar, as you bring it all to a boil
    stir from time to time to dissolve the salt and sugar.
    Once it reaches a boil add 2 thick slices of lemon and your
    Northern Pike or Halibut cut into 1 inch cubes (2 to 3 cups)
    Once you add all the fish bring it back to a boil and reduce to
    a slow boil for 8 to 10 minutes or until fish cubes pretty much
    float to the top. (Do not stir the fish) Remove any foam that is
    on top...
    Once the fish is done remove the fish and place the pieces on paper towels. Let rest for a minute or two.
    Melt 1/2 lb. of salted butter in the microwave or in a sauce pan and
    once it is melted skim some of the solids off the top of the butter then add 1/2 tsp. minced garlic and stir well.
    Dip your boneless Northern Pike or Halibut in the butter and enjoy!

    ...I've lived in Ontario all my life even in Thunder Bay for a few years back in the day and it makes me feel good to hear how excited you all are about coming here as I take it all for granted sometimes.

    You can use walleye also.
    Try using a cast iron pan 2 sticks butter 1 lemon sliced 1onion , and half bottle white wine . bring to boil, and drop northern or I use walleye in the boiling wine butter mix . after you cook a few fish the wine and butter it will start reducing and turn creamy . then drizzle over the fish, looks sorta like a hollandaise but taste even BUTTER.

    Hey Shotgun Red , here's a little thing my late wife Linda Walls taught me about a Poor Man's Libster you should try on your program. Rock Shrimp , they look just like miniature Lobsters & taste just like Lobster with the texture & consistency of Libster too... Just boil or steam a pound or two shells on with no seasoning whatsoever & serve on a plate to slightly cool to handle them & break the shell on belly side & pop out of shell like any other shrimp then just dip in Hot Garlic Butter like you would Lobster , each one is perfect bite size ... Close your eyes & you would swear you are eating Lobster ...Try it , it's simple to make & actually More mimics true Lobster taste & chew ...I swear you & your viewers will think they are eating Lobster & will absolutely Love it ...Usually comes in a 5 pound box frozen so they are easy to buy ahead & store & keep until you're ready to prepare ...I hope you enjoy ; Your follower & Friend ARTHUR WALLS , NEW CASTLE , DELAWARE...U.S.A

    Basically any white fish will work. I'm seeing Cod, Halibut, being used elsewhere. I guess a big Walleye would work.

    That had my mouth watering. Shotgun Red I loved this video it was perfect. Your beautiful get away and yummy catch with a great recipe. I cook my Blue Gill the way you do it. Skin on and I love the tails. Fish bacon is what I call it.

    RED , there is a real nice ceramic contraption ( I cant think of it's proper name ) to keep you dipping butter nice & hot ..it's two pieces . One holds a Tea-light candle in bottom & a ceramic bowl on top to hold the hot Garlic Butter ...The Rock Shrimp , Whitefish , or even Lobster does take on an even better taste when the butter is actually HOT ...I like to shell a few Rock Shrimp & drop a couple into the butter for several seconds before pulling them out & eating them , it just seems to take them to another level of flavor ...Thanks for listening , I hope you try this & pass it along to your friends & viewers & lovers of your show ; ARTHUR WALLS , NEW CASTLE , DELAWARE . U.S.A....

    Those are some good eating walleye. Northern are nice game fish too gamey for me. This is the second recipe I’ve seen using sugar with a gamey fish. I wonder how it would work of a largemouth bass

    Just made it using cod. Followed the instructions exactly. I got mushy fish that tasted like sugar. What happened???
