The love smell of garlic 🧄 and onions 🧅 caramelizing It’s such a beautiful fragrance. 🥰😋 I remember walking into my grandmothers house as she would be preparing this for all of us kids to eat for lunch.
Junkyard fox turning into the CHUNKyard fox. Love you man. Good to see you grow and fill out a little bit over the years. Great dish I hope to try this in the field soon.
lol very true. last years quarantine and closing of the gym, plus you can tell i love to cook, i put on some pounds lol this year im getting back to hitting the gym and hiking more. cheers!
Since I've choosen to eat vegetarian I get really turned off by all the meat eating presented in many bushcraft and survival channels... I highly appreciate that you went for a vegetarian stew in this episode! Much love from Switzerland
I love watching all of your videos, especially your cooking’s videos. I used to live in west Texas and eastern New Mexico, now I am back where I am from east Texas. Anytime I see any of your videos it makes me want to grab some food and go to the woods!
Squash , onion, green Chile sometimes and cheese sometimes were part if every day when the garden kicked in production when I was growing up...many years ago now....
Calabacitas to me is just fried squash and canned corn with diced jalapeños and tortillas. Great side with enchiladas. Love your channel dude. Those green chiles look great, as does your dish
I love calabacitas con queso thanks for sharing, i always knew how to cook them but i wanted to watch the video anyway... greetings from Nogales Sonora
Hi Noggy. I'm more or less right down the road from you! AZ-US side, Green Valley which is on I-19, halfway between Nogales & Tucson. I've only seen this recipe locally at the little Mexican meat market (i.e., 1 room converted former gas station where they BBQ out where the gas tanks used to be). I tried it tonight, tasted very good. ~Miss Jean
Man mucho bueno😋....one of my Dear Mamas go to meals. She added garbanzo beans along with some Puerquito or Pork chops on the side. Dang so 💣! Thx Fellas & nice touch with the blue corn chips. 💯%🔥....👊🏼.
Excellent cooking video and perfect Cuervo soundtrack for this. I appreciate the healthier vegetarian aspect, but I couldn't help think ow some pork would take it up another notch.
Hello from Alamogordo! I watch your videos all the time. I like your recipe, I also add a little cilantro and a little lime. The blue corn tortilla chips was a great addition I've never thought of. I am not to far away from you, and know some good fishing spots. A few trout, and catfish spots in the mountains, that arent over run with tourist, hit me up.
This is a great recipe! I'm a real fan of soups and Mexican food in general (I recently retired to AZ... and love of Mexican food is one of the reasons). I have never seen this in a restaurant other than the take out area of the little Mexican meat market in my area (Green Valley). It's tasty, easy to cook, and makes good use of a lot of the "gotta eat them" leftover stuff I had in my fridge. Had to improvise a bit. I only made 1/2 the recipe because I don't usually have a lot of tomatos unless they are from my garden.... I also did not have Lawrey's seasoned salt, but substituted regular salt plus about 1 tsp. of powdered mole negro I had. I also skipped the corn, since I didn't have any of that at all... but I will try it next time. I used Oaxaca cheese (my favorite Mexican cheese) rather than the mix of Muenster & Queso Fresco. For people who live where they can't get Mexican cheeses I would suggest maybe a mix of Muenster and Mozzarella. At any rate, it was very yummy so thanks for the recipe. ALSO... I love all your survival food stuff. I worry here about might be happening to our economy and while I can't do full out survival stuff since I'm handicapped (mobility impaired)... it's comforting to learn how I can use things like cactus. Do you know is lizard eatable (I see them). And have you ever done (or would you consider doing) a video on how to make a snare to capture small birds, lizards, or bunnies? Thanks! ~Miss Jean
I would add some sliced grilled hot dogs. But, it looks bomb just the way it is I probably wouldn't add a thing. Man, it's so pretty over there thanks for sharing.
That looks awesome! only thing I could say would bee maybe some cilantro, jalapenos chicken yum!! I got a try this both ways. My favorite Mexican dish is chile rellenos, wish I could make it !
Going to give your recipe a try. What you call squash looks like courgette/zucchini to me, I live in the UK. If only I could get chillies that size in the Uk
That's a great dish. I grew up on it. You should check out, if you haven't already, "De mi rancho a tu cocina". She cooks really rustic. Keep it up buddy.
Ain't nothing wrong with that at all, in N. M. I had a Mexican vegetable stew w/ tortillas, an oh my god was it killer. So when channel popped up I knew I had to watch this, thx for the vid bro, thoroughly enjoyed it
Can you make a video about pinion pine resin?? I see the trees in the background in your videos all the time. Soooo many uses for that stuff. I actually make soap with it and mustache wax.

The love smell of garlic 🧄 and onions 🧅 caramelizing It’s such a beautiful fragrance. 🥰😋 I remember walking into my grandmothers house as she would be preparing this for all of us kids to eat for lunch.

Love seeing my hometown Organ mountains!
THAT LOOKS REALLY GOOD
Thanks for the content. Peaceful. Nice to see this to help step away from the dark reality we all face daily
thats exaclty what we try to go for. these videos are meant to teach skills, recipes, etc, but its also a refuge from all the ugliness of the world.
Great food and beautiful scenery. My only change to the recipe would have been a couple of extra cloves of garlic LOL

Sounds great! i need to start using poblanos more often. happy new year, Karina!
Never saw stew with cheese before. Thank you for sharing your recipe with us, James. Stay safe and stay warm.

Great Video. Thank you James.
Glad you enjoyed it
Made some of this awhile back after seeing this video and it was super good, making some again today
got my meal ready!
Loved this recipe. If I was making this plant based I would try to use canned coconut crème and some corn starch to thicken the stew.
Looks great! Regards from Sweden

Being french to me it is basically a spicy ratatouille with soft cheese, seems awesome !
thats very true, i wonder if this dish’s recipe is derived from french cuisine.
Great Squash soup. Would try cabbage also. Cabbage is in season when squash is in my neck of woods.
Awesome video !!!!!!👍🏻👍🏻👍🏻👍🏻☺️
Thanks for the visit
Meat! Nom Nom Nom and it’s Nom Nom! Nuff said 😬 brother!
nothing beats a good campfire meal
that did look like a excellent dish to eat
Love these cooking vids. But cheese and chilli's, it's going to be blazing saddles tonight
Lol my stomach is used to it.
Excellent cooking video and perfect Cuervo soundtrack for this. I appreciate the healthier vegetarian aspect, but I couldn't help think ow some pork would take it up another notch.
Glad you enjoyed it! you can definitely add some meat or make this as a side dish to compliment steak or something
I will give it a try!!! I'd add cilantro (the master herb) to the vege stew.
Sounds great!

I would add some sliced grilled hot dogs. But, it looks bomb just the way it is I probably wouldn't add a thing. Man, it's so pretty over there thanks for sharing.
thank you for joining us
looks delicious :)
Other than some meat, possibly chicken, quail, or.pork, it looks delicious. 👌
Mmmmmm green chile...
That looks awesome! only thing I could say would bee maybe some cilantro, jalapenos chicken yum!! I got a try this both ways. My favorite Mexican dish is chile rellenos, wish I could make it !
Dude i love chile relenos, i need to learn how to make them outdoors
Going to give your recipe a try. What you call squash looks like courgette/zucchini to me, I live in the UK. If only I could get chillies that size in the Uk
That's a great dish. I grew up on it. You should check out, if you haven't already, "De mi rancho a tu cocina". She cooks really rustic. Keep it up buddy.
You need a little spice, just a little, if the green chiles aren’t enough. I prefer the stewed kind like you’ve made, versus the steamed kind.
Stewed tomatoes, Louisiana hot sauce, katchit, mouse turde, good to go.
Oh yeah that looking so yummy 😋 im have to try this HellToTheYeah 😋
ive also tried it with chopped sausage in there and oh man, its great
Man, a stewed up rabbit would would be amazing in that stew
That would be cool
You should char the onion and tomato then get corn on the cob so you can char it too. It makes a better taste in Calabasitas or any salsa
Yum yum yuuuuum.
Ain't nothing wrong with that at all, in N. M. I had a Mexican vegetable stew w/ tortillas, an oh my god was it killer. So when channel popped up I knew I had to watch this, thx for the vid bro, thoroughly enjoyed it

It actually means "little pumpkins" 😛🤟🏼
