Not exactly. Hyperspace travel technology would be an invaluable assimilation target. Hyperspace is even more of a cheat in physics than warp drive. You can cross the entire galaxy in a matter of weeks with it. Voyager going warp 9 took years to even begin crossing the delta quadrant before sheer luck (and time travel) saved them.

The death star would get one shot off, it would damage a cube severely, then 3 cubes would show up, assimilate the death star, assimilate all their weapons, and then assimilate all the Empire's ships and planets.
Considering the deathstar outputs enough energy to destroy objects with hundreds of thousands of times the mass of a borg cube, I believe the opposite is true.

Problem with Star Wars is the short range of their ship weapons. Max effective range of a Star Destroyer turbo laser is 1,200 kilometers and Star Treks phasers consider 20,000 kilometers to be knife fighting range with a max range of roughly 300,000 kilometers. That said turbo lasers are brute force plasma weapons, that might give them an advantage if they can get close enough to use them. Then again being close to a Borg cube is a very bad place to find oneself.
The Empire would be probably be defeated in a protracted war, but once the Emperor was assimilated he would easily cause havoc with his force compulsion powers. Probably a civil war between the borg queen and Palpatine's borg.

unless this happens immediately with both sides fighting from the get go as you have laid out, the borg will win. First they assimilate outer worlds getting an understanding of the technologies that exist within the star wars galaxy. Palpatine and Vader would have no idea what's happening as in current canon(not legends) they have not displayed any precognitive abilities within the force. outposts would just vanish and they would have no clue as to why. then the borg come across some imperial ships. Those ships are not powerful enough to destroy a cube alone. so after a bit of time the borg will have adapted to the Imperial Navy's weapons. and they would then start to, if they hadn't started upon first contact, assimilating the imperial fleets. "But what about the shields on the ships" someone will say. My answer is Borg Tractor Beams. They will break down the shields and thus allow the Drones to start beaming over. At that point star destroyers and other Imperial ships become borg ships, adding to the collective. now one cube that the Borg sent in will have a fleet starting of assimilated ships. The Imperial navy have never had to worry about weapon frequencies and unlike starfleet who realised that that's how you over come the Borg Adaptability by changing the frequency of their weapons and shields the imperials won't have any more defenses. Next you'll hear some one say "But the Death Star's main cannon..." Yeah. that will be useful against a single or maybe two or three ships before the now growing fleet of borg ships adapts to it and then the station becomes theirs. The only thing that has a chance to do anything are Palpatine and Vader. and even they can be overwhelmed. The Borg will likely have accessed the imperial data banks and more to have learned about the two's sorcerous ways. and they'd determine that they would be a threat and hunt them down. With Borg Sesnsor tech they could easily find a man that is more machine than man and beam some numerous cattle drones to surround him in the hope of assimilating him. If they mange that then the Galactic empire will be forever known as the 1st Galactic borg Empire(in honour of Palpatine declaring it the first galactic empire. How ever if the two sides are fighting from the get go, the Imperial navy with all you said would be against the borg, will likely decimate the borg seeing as the Borg don't typically use more than one ship unless they deem the enemy a high level threat like Species 8472. But if Unimatrix Zero is in this fight, the Imperials will not survive even then. They wouldn't know about the Borg Queen nor that killing her or destroying Unimatrix Zero will stop or temporarily disrupt the borg as a whole. Sorry for the long response. I am a fan of both series but i think the Star Wars Fans overlook how nasty the Borg can be.
The Borg has never dealt with The Force. That could be a serious weakness. Being able to easily control the weak minded, and the Borg are definitely weak minded.

The Borg would win easily, its how they work, they don't just appear in the heart of a major system and start blasting away they analyze, study, see if what is there is worth consuming and adding to their perfection and with all the resources available, the Borg would move in but slowly, they would be able to see with Star Trek sensor tech that the Star Wars galaxy is very large and any scout/single cube would need to be cautious or be overwhelmed by sheer numbers, for now. First it would start with outposts, freighters, supply ships disappearing, strange rumors/sightings of unknown vessel(s) and outlying colonies in the outer rim areas no longer responding Then it would start becoming more and more frequent and by then its far to late. The Borg will have assimilated hyperdrive tech, droid workings along with weapons and shields of everything they have come across and the Star Wars galaxy is full of that stuff. With access to hyperdrive knowledge and how navigational computers calculate it, they can start using the hyperdrive lanes to spread across the galaxy extremely fast. Regular warp drive really tips the scale as no Star Wars ships can keep up with that kind of movement in system type combat, hyperdrives work by jumping, stopping, calculating another jump, then repeating until you are at your destination. Its very very fast but limited in what you can do inside a system itself or regular space as Borg cubes/vessels can fly around a speeds exceeding light and fire weapons at targets. From studying what they know they are already immune to blaster fire, turbo lasers, ion cannons and such, Star Wars is not the only thing they have taken over, they have knowledge of countless species and tech that have allowed them to grow into what they are today. Beaming is another thing, by using their sensors and from what they have learned of deflector shields they might be able to beam right through it, you can do it in Star Trek on older type shields with newer beaming tech and the Borg are masters of that shit, its what they do to invade. After that like a virus they would start spreading, outlying worlds would go dark, Imperial and Rebel vessels would vanish/disappear from the rosters and not respond. Any person they assimilate the collective instantly knows what that person knew, tactics, military strength, all that becomes part of them. Weaknesses and strengths of the species, their methods, their reasons for resisting, the government of the galaxy, the Borg understand it. The force is the only thing that could give them pause but Palpatine and Vader are all that is left really after the Jedi purge and two humanoid beings in the face of the borg collective are nothing. Plus since midichlorians are something the Borg have never come across, when they do they might consider it essential to assimilate it to add to their perfection like with the Omega molecule, they might consider it something they will stop at nothing to possess. Problem is that a borg cube has so many drones and how much the force could affect that kind of numbers is questionable. so much of it is also automated and run by computers.
Vader and Palpatine are still human beings, they can only fight so long even with the dark side fueling them, they will tire eventually. Borg can take over entire planets easily, they adapt to attacks, Palpatine can throw force lighting at them all he wants but he will fall to trillions of borg coming at him, they can destroy any planet he is on with many different types of tech. There are many types of things that have been used in Star Trek episodes that have destroyed or made planets uninhabitable for humanoid life, the Borg also have no qualms about "kamikaze" type attacks if it benefits the collective, again they have done like as they did against Species 8472.
I'd say it hinges on if the Borg assimilates someone who's force-sensitive.
