I always use dried mustard in my mac and cheese and my quiches.
My mom's recipe is super easy and always gone in seconds. Its just the noodles, cheddar and colby cheese, butter, seasoned salt, regular milk and eggs.

You got me craving Mac n cheese like a mutha’ fu***r!! 🤪 I was reading through the comments of the NYT website and sooooo glad I did. Read it’s too salty so possibly omit the salt. Also others used white sharp cheddar and a few also used whole milk ricotta/sour cream and/or cream cheese, and another person said he snuck in some cauliflower in it as well, so the add-in’s are endless!!!!! I can’t wait to try this, and especially the Wolfgang Puck recipe, I love him so much! 🥹🫶🏽

do the noodles get mushy cooking for that long? Also what do you think is superior - a Mac with a béchamel or this method? BTW I love using mustard powder with sharp cheddar. Makes it that much cheesier!
The noodles were a bit past what I’d prefer - gonna mess around with it but think finding a pasta that has a couple minutes longer cook time could help!

If you like this mac & cheese, why goof around with it? I can't seem to make homemade mac & cheese that I personally like. I honestly don't seem to be able to make truly "creamy" mac & cheese. Mine is always gritty no matter what cheese or cheeses I use. Grrrrrr.
