That toasted rice is really good. We call it "tutong" in the philippines. We don't really make it but it's often naturally there when we cook rice in the stove. For many, it's the best part in cooked rice.
Few comments here. 1) Since you don’t have a wok burner I’d suggest going high heat and trying to keep the wok on the heat most of the time. I’d even go as far as not mixing it for a few seconds to allow the rice to toast more. 2) Soy sauce should be sizzling quite a bit when added to the wok. Put on the sides so that it sears a bit (adds more flavor imo). 3) The crispy rice was a really nice addition. I remember when my mother used to make fried rice that part was always my favorite when it stuck to the bottom of the pan. 4) This is a matter of personal preference but I would add the egg later in the process so it doesn’t overcook. Especially when the heat is put on super high they can get dry fairly quickly.
Yeah with the egg part it's ok to fry it up and take it off it halfway so you can cook it all the way after (basically you put the half-cooked egg at the end)

the way that you made the crispy rice, it is also a part of Filipino Fried Rice(sometimes). When there is crispy or burnt rice under the cooked rice, it is added with the fried rice(mostly).
A new iron wok usually will be processed before it's first use (AKA"開鑊"). clean it, burn it hot, glaze it with animal fat/oil, heat it till oil smoke, rinse it with water, and repeat the oil-treatment several times. Once it's done, the wok will have a slightly metallic blue color, then you get a well non-stick and highly heat conductive wok. At least that's what my grandpa did when I was a kid, he then used that wok to beat my and my cousins' asses.
