    I've been watching recommendations and having watched a few different cooking/baking videos like this. All the videos have the camera close up zoomed in, microphone sensitivity/volume is max, and no commentary whatsoever. I realized it's all deliberate. Apparently it's a trend on youtube.

    Ingredients:
    67g butter (room tempt)
    67g milk
    35g medium flour
    32g cake flour
    4 egg yolks
    0.5g salt
    6g honey
    2g vanilla extract
    4 egg whites
    73g white sugar
    Procedure:
    1. In a double boiler, melt butter and milk.
    2. Sift the medium flour and cake flour on to the butter-milk mixture. Stir slowly to prevent gluten formation.
    3. Add 4 egg yolks. Mix one at a time.
    4. Add salt and honey, then mix.
    5. Add the vanilla extract and mix.
    6. In a different bowl, whip 4 egg whites.
    7. When the egg whites starts to bubble, add the sugar in 3 batches at 20 seconds interval.
    8. When meringue is at soft peak, fold in the meringue in 3 batches on to the butter-milk-egg yolk mixture. Mix slowly to prevent the batter from deflating.
    9. Preheat oven at 150°C (20mins) and bake at 140°C (15mins), 130°C (55mins) in a water bath using 17cm square pan.

      @@dhaneeshbabu1510 tastes good! perfect pair with coffee or tea. But cooking wise, I struggled perfecting this cake. The browned top is so hard to achieve it will take you HOURS (to me 2hrs almost 3hrs) on low heat. But you can cook it without having the browned top and stil tastes good. It justs that it adds texture and more egg-y flavor to the cake. You should try it!

    0:37 melt milk + butter add flours stir egg yolk stir, add honey + vanila
    1:40 beat eggs white add sugar divide 3 time, 20 sec each time
    1:40 -2:11 soft peak, 2:22 add meringues to batter 3 time, use whisk to stir and then use spatula to fold the batter
    3:24 to 4:02 pour hot water in the pan, bake 150 C for 20 minutes 140 C for 15 minutes 130 C for 55 minutes

    Just made this cake and it’s a success! Taste so good & spongy texture. Instruction is simple to follow. Just need to be patience to wait for the cake to be done to perfection. Although I have baked much longer than the timing given as its seems uncooked in the middle. Will turn up the degree on the oven the next time I try.

      I'm glad you're successful. The oven temperature should be adjusted to the oven you use. It's hard to succeed at once, but you're really good.

    I'm not a Korean. But as a Taiwanese, I know what is medium flour and bread flour.
    Medium Flour=All-purpose Flour
    Cake Flour also called Low Gluten Flour

    A lot of people ask for ingredients in english, so you can just change the language in the settings, but anyway here is the ingredients:
    4 egg yolk
    4 egg white
    67 g milk
    67 g butter
    2 g vanilla extract
    6 g honey
    0.5 g salt
    73 g sugar
    35 g cake four+32 g all purpose flour (or you can use 67 g cake flour)

      박력분 Cake flour 35g
      중력분 All purpose flour 32g

      실온 버터 Room temperature butter 67g
      우유 Milk 67g
      노른자 4개 Four egg yolks
      소금 Salt 0.5g
      꿀 Honey 6g (생략가능) (Can be omitted)
      바닐라 익스트랙 Vanilla Extract 2g
      흰자 4개 (130g 정도) Four egg whites (130g or so)
      설탕 Sugar 73g
      pan size: 17cm square pan
      *Recipe
      1. Place the Teflon sheet on the pan higher than the pan height.
      2.Put butter and milk in a bowl.
      3.Place butter bowl in a bowl of hot water and heat to 50 degrees.
      4. Sift flour into melted butter and mix slowly with a whisk.
      5. Add egg yolk one by one and mix.
      6. After mixing the eggs, add salt, honey, and vanilla extract, mix and let stand for a while.
      7. Preheat the oven.
      (The quick-working person heats up from the beginning, while the slow-working person heats up before making the white meringue.)
      8. Divide sugar into the whites three times to make soft, dense meringue.
      9. When the meringue is complete, divide the meringue into egg mixture three times and mix slowly with a whisk.
      10. If you can't see the white meringue, mix it evenly with a spatula to the bottom.
      11. Pour the batter into the prepared pan and spread the top evenly, then remove the bubbles by lowering the pan about three times.
      12.Pour some hot water into a large pan.
      13. Dip the dough pan in a pan of hot water and bake in the oven.
      14. Remove the pan and castella directly from the oven and remove the Teflon sheet immediately.
      15. Taiwan castella is difficult to succeed at once because meringue, dough temperature and oven temperature are all important, and you have to bake several times and find the right temperature for the oven you use.
      *Oven temperature (Oven standard I use: Wisewell oven)
      150 Degree 20 Minute Preheat
      Bake 140 degrees 15 minutes, 130 degrees 55 minutes, total 70 minutes.
      (Set the time to 70 minutes, bake 140 degrees 15 minutes, lower to 135 degrees and bake for 55 minutes.)
      (Baked in the third compartment above)
      (You have to bake several times to find the right temperature for your oven.)

      After making the video for you and with it all the measurements, you want them to go out of their way to also do a conversion from grams to spoons, so it's easier for you? Do your own conversion.

      *Oven temperature (Oven standard I use: Wisewell oven)
      After preheating 150 degrees 20 minutes,
      Bake at 140 degrees for 15 minutes and lower to 130 degrees for 55 minutes in total.
      (After setting the temperature at 140 degrees 70 degrees, 15 minutes later, lower the temperature to 130 degrees and bake for the remaining 55 minutes.)
      (Baked in the third compartment above)
      Since the temperature varies from oven to oven, it is better to adjust the temperature of the oven.

    Why preheat the oven at 150 but then bake at 140? Seems odd. After 15 minutes at 140, lower to 130 for 55 minutes?
