When the egg whites starts to bubble, add the sugar in 3 batches at 20 seconds interval. 8. When meringue is at soft peak, fold in the meringue in 3 batches on to the butter-milk-egg yolk mixture. Mix slowly to prevent the batter from deflating. 9. Preheat oven at 150°C (20mins) and bake at 140°C (15mins), 130°C (55mins) in a water bath using 17cm square pan. Happy baking!! ❤

The browned top is so hard to achieve it will take you HOURS (to me 2hrs almost 3hrs) on low heat. But you can cook it without having the browned top and stil tastes good. It justs that it adds texture and more egg-y flavor to the cake. You should try it!

Just made this cake and it’s a success! Taste so good & spongy texture. Instruction is simple to follow. Just need to be patience to wait for the cake to be done to perfection. Although I have baked much longer than the timing given as its seems uncooked in the middle. Will turn up the degree on the oven the next time I try.
