- I never buy Cottage Cheese! I make it on my own.
It's so easy, look: read more...
To prepare 1kg of Cottage Cheese I use:
5 liters of milk
1 cup of buttermilk or soured cream
salt
pepper
spring onion - optional
In this video I am showing how I make cottage cheese from milk using the fermentation process. Fermentation gives the cheese a beautiful tangy taste😋
Method for 1kg of cottage cheese:
*Pour 5 liters of fresh milk into a big pot
*Add 1 cup of buttermilk or soured cream into the milk and stir well.
*Cover the pot with the lid and leave it in a warm place for about 12 hours (overnight)
*After 12 hours check if curd has developed in the milk. Use a spoon like I did in the video. Let it rest for longer if curd didn't develop properly, sometimes it takes a bit longer especially during colder months.
*When it's ready, place the pot on the stove and start heating on the lowest setting.
*Cut the curd using a long knife or just break it into 2 inch cubes using a spoon.
*Do not stir the curd
*Cook for about 30 - 60 minutes
*Check the temperature in the center of the pot. You will notice that at this stage whey will start to separate from the curd and that the whey temperature is higher than the curd temperature.
*Once the curd temperature reaches 40°C / 105°F kill the heat and cover the pot. (whey temperature will be around 70°C / 160°F at this point)
*Let it cool down for 3 hours
*Start straining it using cheesecloth like I did in the video.
*Collect whey into a separate pot. Then transfer it into the bottles and keep in the fridge. Drink it cold or use it for baking.
*Twist the cheesecloth to create light pressure on the curd. Cover with a plate or bowl and place in the fridge to strain for 2-3 hours.
*Transfer your homemade cottage cheese on the plate and share with friends and family.
*Store it in the airtight container in the fridge.
Once your Cottage Cheese is ready you can slice it and eat it with your favorite bread or you can mix it with soured cream, yogurt or mayo, add salt, pepper and spring onions to try something even better.

In search of cottage cheese recipe I got your channel and your videos are so genuine and easy I discovered so many recipes but sadly your channel is so underrated 🙂
Lots of love from India ❤
Thank you so much 😊😍
Amazing! Thanks
In India, we call it as 'Paneer'. It is used for making Sabji.
The process of making Paneer is different and so is the taste👍 I have a paneer video on my channel if you would like to compare 👍 I've done few Indian recipes using Paneer but haven't had Sabji yet, thanks for sharing 😍
This is typically hung curd
Its actually call chena..not paneer
If you put weight over it for some time it will take some shape and you can call it paneer
Not paneer
Can I use raw milk or should I boil it first?
Please send full video link..
❤❤❤❤ Dayyum!
Can I use yogurt to firm up the milk instead of buttermilk
Can you give the nutrition data for this cottage cheese vs Indian Chhena that we generate just by lemon in milk? Or are they same?
More cal and fat in Indian one
No testcle destroying additives, no crickets/zee bugs, no yucky fillers or preservatives. Just organic dairy & vinegar.
This is immeasurably easy, & good for you!
This is basically hung curd..
I appreciate you showing us this amazing hack but your using milk to make this and milk+electricion for The stove and Boiling it Plus buttermilk adds up more than you need to buy cottage Cheese at home
Get a goat.
i can get a gallon of milk for less than $3
to buy the cottage cheese i like it is more than $3 and i would get more cottage cheese to eat out of the gallon of milk.
granted it is more work. but sometimes time and energy is available when money for groceries is not. but yes you do use power as well and the buttermilk etc.
so i think it probably evens out in cost over all! then i guess it is down to quality, which tastes better, and enjoyment of the process.
personally i think i’ll just buy it honestly 😅
@@lilithabunni if you’re doing somewhat big batches it’ll be more cost effective because you’ll use the same amount of electricity which isn’t significant in the first place because it take 15 minutes tops to boil and the buttermilk is literally less than a cup or just about its cost effective
Also can use lemon juice or white vinegar to separate the curd and wey
I like that this cheese recipe contains only like products. Store bought in my area in my price range all contain gums and other additives.
Is the milk in room temperature?
Yes, it is👍
Recipe?
Full recipe is in the description👍
How to make butter milk?😆
Great question! I use dry buttermilk powder. So many uses Terrific pantry item.
difference between using milk and butter milk?
ever heard of google?
I'm using buttermilk or soured cream to introduce good bacteria to the milk. If you use just buttermilk your curd will be different (much smaller) and cheese will have different taste and it will look more like a strained yogurt rather than a cottage cheese. Hope that helps 👍
Soured cream? Never heard it called that before
Did you hear sour cream? Or something else?
@@TasteSpell I the caption literally said “soured cream” like if it’s a past tense version of sour cream.
😂@@BozColorado
Pasteurised or non pasteurised milk?
Cool! I will try this out :)
Romans 6:23 "For the wages of sin is death, but the gift of God is eternal life in Christ Jesus our Lord."
Thanks 😊
