  • Buttermilk is an amazing ingredient for pancakes, cakes, and even fried chicken but it is so annoying to keep on hand. Most recipes require only a little and those big cartons expire in the blink of an eye! Well worry not because this super-easy homemade buttermilk substitute works perfectly in all your recipes. I've made three types of substiitutions so no matter what you have in the pantry you're still covered!

You can freeze buttermilk. Freeze it in ice cube trays, and once they’re frozen, take them out and put them in a plastic bag. Or, if you buy it by the carton, be sure there’s enough room for expansion and after it’s frozen you can cut the carton off, and put the big chunk in a plastic bag. It just depends on how much you usually use when you use it. It will keep, in the freezer, up to 3 months.

I really love the way you explain things. I have watched SO MANY baking videos, the problem is they do not explain the things (even the little things like why we use buttermilk for a cake), they simply tell you the recipe. It often happened that i followed the recipe, but whenener it didn't turn out the way i wanted, i used to get puzzled where dis I do wrong. But when you explain, you always mention where things might go wrong and what should we do if that happens. Your recipe is really easy to follow that way. I made carrot cake and it was a Hit !!!! Thank you so much !!!

Interesting video! I use lemon juice in milk, or liquify yogurt with milk. Commercial buttermilk, yogurt, sour cream, etc all are cultured - certain bacteria added to get the desired effect, so it makes sense to me that the cultured sour cream would taste the best. Real buttermilk is basically the water squeezed out of cream and was traditionally used to make ricotta cheese.
    Thanks for the great vid!

Thank-you, this is such a great help for when I don't have any buttermilk in the fridge. In fact, I think I'll try the sour cream version today for cupcakes! Your method of measuring flour is very reassuring, and it's exactly how I do it too! I find the dip and sweep method compacts the flour, and therefore you end up with slightly more flour than required. ☺

2:02 I remember how to make buttermilk from actual buttermilk😋. I used the buttermilk substitute (milk and lemon juice) in 2 sheet carrot cakes 12 cups of carrot cake batter for 2 sheet cakes. I used pineapple. I only had to use I cup pureed pineapple (accidentally pureed instead of chopped) and I cup of the buttermilk substitute. This was a swap for the oil. I only had to use 1/3 c oil. Sheet cakes get done much faster than the recipe says.😃 Thank you. You are truly inspiring😃😋😊😃😋😊😃😋😊😃😋😊🌟

Butter milk is used in Denmark, my old country, for a really deilcious summer dessert (referred to as cold sweet buttermilk soup):
    Koldskål:
    1 liter of buttermik
    2 egg yolks
3 tbsp sugar (I prefer golden unrefined caster sugar)
    1 vanilla pod
    zest of organic lemon
    Floating icebergs:
    egg whites
    8 tbsp icing sugar
    pinch of salt
Egg yolks (keep the whites) & vanilla beans are beaten with sugar until light and frothy. Add the butter milk stir gently with the lemon zest.. Set aside to cool in fridge.
Over bain Marie, or just boilt water, whisk the egg whites with the pinch of salt and sugar into a stiff French maringue fluff. The heat of the boilt water helps the eggs to coagulate (is that the correct term?).
When you are ready to serve the Kåldskål take it out of the fridge, give it a gentle stir and serve either in a big bowl or in fancy little bowls and keep the floating iceberg mixture on the table so people can add as much or little as they would like. You can also be the one who decides how much of the floating icebergs go into each bowl

Appreciate these buttermilk substitutes here! I knew of all of 'em except the sour cream version; might have to try that out as it looked the most like buttermilk. I just made some pancakes w the vinegar substitute, but added some cream of tartar to the dry ingredients. It came out quite fluffy - especially when I added the meringue whipped egg whites. All this to say, always tweaking my buttermilk pancake recipe and this video gave me some ideas for future attempts. Thanks!

(Plus lots of recipes call for a dash of lemon. I do not include the lemons juice I use in the buttermilk as a part of the lemon juice asked for the recipe, that’s separate lemon juice)

It's really hard to find whole buttermilk. They think everyone likes low fat food, but it's not good for you. They take the fat out of food and add sugar.

Another good substitute for buttermilk is mixing 3/4 cup of whole milk yogurt with 1/2 cup of milk. And It can be used immediately😊

Some studies indicate drinking buttermilk lowers cholesterol, and it reduces inflammation in the gums. So I think I'll have a glass tonight. Maybe a few ounces to start. And LOTS of ice. That sucker's gonna' be frosty-cold! Ice also reduces the bitterness of drinking baking soda!
