I make giant soft pretzels but have no bread mixer. doing it the old fashioned way while having essential tremor is extremely messy and can be painful. so I imagine the same problems there will plague me here.

In your experience, what makes dough sticky? I often had the problem that it would stick to the hand, or roller pin and rather get ripped apart than rolled thin... I've noticed that even the butter you use seems to make a difference, but I'm not sure what exactly causes the problem. Especially when you were stacking the rolled doughs, I thought back at how many different things I tried to prevent them from sticking together...
Ahhhh that looks so yummy!!! For a vegetarian alternative is it okay to just exclude the pork? Or is there something else you would recommend as a substitute?
No offence, but I'm a little frustrated when people just say curry. I got at least three different curry at home and three Masala. None of them tastes even remotely similar to the other, but all could be called curry... Similarly, people say pepper and while most mean black pepper, I've seen it used for red and green pepper, long pepper, Japanese pepper, and even chilli pepper. Historically, there would be even more things people called at one time or another pepper! Most of them are however no longer in use, such as Moenchspfeffer (literally monks pepper, a plant that grows in Europe and was the poor mans version of pepper)

If it's not kneaded properly or if its too liquidy it would be sticky. This dough in particular doesn't stick very much and is very easy to handle..

Beans and tofu
Refried beans would work well I think. If you don't substitute it with something, it's not going to be very filling.

Pork has a strong flavor. Chicken doesn't. Also hard to find pork stock cuz it's fatty

lol ya, there's so many types of curries and peppers, even masala mixes. I can see why you would be frustrated.
Curry is a bit dry
I made it dryer so it doesn't leak while stuffing it.
