We play online by using Parsec or Steam Remote Play to connect to each-other's computers. The in-game mods we use for co-op from there are: Jolly Co-op (which is part of the Downpour DLC), SBCameral Scroll and Split-Screen Coop. To make it more fun I'd recommend also adding Revivify and Slughosts.
In terms of direct online play there's a mod that's still being worked on called Rain Meadow that is trying to be proper online multiplayer. It's not finished but it's getting along and is going to be a massive step up in multiplayer rainworld.
