  • Inspired by the pollo al carbon served streetside in Sinaloa, Mexico, Chef Jonathan Zaragoza’s recipe features a whole, spatchcock chicken rubbed with a paste of guajillo chiles, cinnamon, pepper, cumin, oregano, cloves, and achiote paste, and brightened by lime, orange, and pineapple juices. The chicken is then cooked over a charcoal grill, until the skin is charred around the edges. Carve up the roast chicken and eat it with chargrilled onions, tortillas, rice, and beans. #mexicanfood #corntortillas #roastchicken #chefsteps #jonathanzaragoza

I just come across your channel but I’m impressed with the knife and marinade department, speaking of mama who cook non-stop all day because I love it and I can do it with my time management to cook from scratch for my folks. Thank you for sharing 🎉

"you only want to toast your guajillos for like a minute" "when the guajillos are toasted toss in the spices and toast for another minute"

looks like an Argentinean asado type grill. Some would also call it a santa maria type grill but it looks like has V-slat grates which lead me to believe it is an asado grill.

How is this is relevant to the video? And, pretty sure dogs have been eating raw chickens since the beginning of their existence.

Schmidcl77. Why denigrate a great dish? If you do not eat meat, why did you watch it? You are obviously biased, move on.
