It's hard to understand when native speakers use words in a different meaning. However, with "it's interesting" to mean "weird," we usually say it slowly and indicate with a facial expression that we are using the words in an ironic way. Regarding synonyms for "interesting," I would say "fascinating" would be a good one, but most people just use "interesting" and young people might say "dope"
