Yes, vodka in Jello! Wouldn't the alcohol partially evaporate through the chilling process? Also, aren't Jello shots a sort of lower tier concoction? Do the wealthy consume Jello shots? I would think rum truffles or some such would be preferable.

I ran a casual dining restaurant. I admire your extensive prep. We prepped all day everyday. When peak hours happened it was smooth as silk. Prep relieves much stress!!
It never ceases to amaze me how you work out the menus (including requests) and calculate the priovisioning for the fabulous food you and your sous chef create!
I am a passionate home cook, so can't really compare myself to you, but as a girl whose love language is cooking for people, this job seems so fulfilling. Although I hate ships and open sea, so couldn't do it anyway, haha. But it's a pleasure to watch you work.

My two favorite parts: visiting the boulangerie to get the fresh bread (I can imagine them breaking like branches that's how crisp they are) and making the arancina with the beef inside them. Tres Bien! Great vlog! Glad you enjoy what you do!

Boy, that celery root brings me back to the 1990s, when I was a cook. I was sous to a French man in California and we regulary made a celeriac custard, cooked in ramekins. He called them celeriac tureens.
