    I've never done a dry brine, just a wet brine in as bucket. But I always do the skin separation technique to add a compound butter under the skin.

    After cooking Turkey for 50 Thanksgivings, I decided to try something new. Something I saw online. Spatchcocking a turkey, which is cutting out the backbone and breaking the breastbone so it lies flat instead of standing up. Oh my goodness, it only took 90 minutes to cook, therefore it was incredibly moist. This will be my go to method from now on. Never stop learning never stop cooking.

      I always butterflied poultry, it just roasted better; also dry brined it. Didn’t know it wasn’t commonly done.

    3:17 Doesn't mixed spice normally have allspice as one of the main ingredients too? I think allspice is the spice that makes me think of Christmas more than any other!

    Be my 1st time cook for family xmas dinner in ireland we have ham with turkey.can turkey be cooked night before ? So i can use oven nxt day for roast veg etc..helpp i havent a clue 😂😂😂

    Throwing spilled salt over yer left shoulder doesn't bring good luck, but it DOES avert bad luck brought on by spilling the (expensive) salt. My late father contended you had to use yer right hand to throw the salt over the left shoulder, but that may have been only because he was right-handed. Any road, even though I'm left-handed I follow his example.
    ... My wife would commit MAYHEM if I took the wings off and threw them into the gravy pot! She says they're her favourite bits. As it is, I have to fight to keep her away from the liver and gizzard so there's any giblets left at ALL. (We're a family that enjoys our offal, regardless the animal.)

    So I'm slightly confused. If i have a frozen turkey, defrost for 2 days, the brine for 3. Will it still be ok, or will it go off? Asking for a friend 😅

    The sad thing about this is that my family don't have seasoning on anything definitely no herbs, I have to make very plain food when I go round. My grandma is most excited for me making her a cheese toastie when I see her. 😅

    75c is wayyyyy to hot people.
    Take your turkey out at 65c and let it rest

      no it needs to hit 74c for safety. Although it will increase in temp while resting it wont gain a whole 10 degrees more. Please ducklings .. take it to 74 spending Boxing day throwing up is not the fun holiday you want
