How to Color Score a Salmon Fillet

Fillet color is one of the most important factors for consumers purchasing salmon or steelhead in the marketplace. You can ensure that your fish are approaching optimal color before harvest by periodically sampling from the RAS and scoring with a SalmoFan. We demonstrate the color scoring procedure in this video.
