Fig and Balsamic for the win! We don't get fresh figs often in the PNW, so I use fig preserves/balsamic. I have this with fresh mango and some goat cheese for breakfast all the time, and add some crispy fried bacon bits for the deluxe version. I bet this pork chop version will be right up my alley!

User feedback on this recipe: I attempted this recipe twice, the first time was a bust. I think my mistake was using dried thyme instead of fresh thyme, & the dried version was a bit dated too. The thyme flavor was unpleasant & basically ruined the dish. During my 2nd try, I modified the recipe slightly. I basted the pork chops with some butter & rosemary while it was searing in the pan. I also used a bit of red wine to deglaze (in addition to the figs & balsamic vinegar). I left out the thyme altogether. My 2nd try turned out really well, & I think this will be my go-to recipe for European-style pork chops from now on. Thanks!

Just watched you with my parents on the big screen who just love your way around the kitchen and all your garden ingredients. My dad has a question, do you bury your fig tree in the winter? He has 6 trees but because our winters are so cold one wasn’t buried deep enough and died. He’s 93 now so we hire students to bury them (it’s one big job!) Any advice you can give. His largest one he brought back from Calabria many many years ago. Thanks again for another great video. Making this recipe tonight. 🇨🇦🇮🇹
