Here's the measurements for anyone who needs them
Sugar 1 cup
Oil 150 ml
Eggs 2
Vanilla 1 teaspoon
Flour 1 cup
Baking soda 1 teaspoon
Baking powder 1 teaspoon
Cinnamon 1 teaspoon
A pinch of salt
Grated carrot 1 1/2 cups
1/2 cup of pecans if you want them

this is pretty similar to our usual carrot cake recipe here in UK, except we use butter, mixed spice and no pecans but possibly walnuts .. it's such a nice cake tho, I love carrot cakee
as an american i’ve always seen it with walnuts too! often also raisins, but usually never pecans

Can add canned pineapple chunks with the juice (abt half cup) , about 1 cup of raisins with assorted nuts (crushed), with raisins and pineapple can cut down on sugar … the cake be more moist and soft…

If you make it again, add some ginger and allspice with the cinnamon. Maybe even some clove if you're feeling more spicy lol.

I’m glad it was better than the worst rated (obviously) but it’s still such a sad recipe, though I grew up with my moms recipe which is the best,it’s got: carrots, crushed pineapple, walnuts, raisins, dried apricots, and sunflower seeds. And to top it off her cream cheese frosting is the best too because it tastes of cream cheese not sugar (we aren’t a frosting family) so the fact we like it and it isn’t too sweet is the best

@@sugartreatsuk36 yes it has 3 lbs of carrots, and it makes 3 13”x9” pans of cake so that’s 1lb of carrots per cake there’s probably 2 cups total of other stuff per cake

I always find strange the way you guys eat Carrot Cake.Here in Brazil, we blend the carrots with the wet ingredients, and we don't add frosting, we add Brigadeiro, it's so delicious, I hope everybody could get a piece of Brazilian carrot cake one day, and I want to prove your carrot cake, it's not like yours but it looks so nice and delicious too.

Yes it would still be good. Their are different add ins people like in their carrot cakes some people like dried fruit some people like nuts but its still good without you just get a slightly different texture since you dont get the crunch

Where are the raisins? Carrot cake isn’t the same without raisins. Also, don’t like nuts period, so swap the two, and cut the shredded carrots to prevent long strands. Frosting should be optional. I’d probably still eat this though 😅carrot cake is my second favourite after chocolate, then lemon 🤤;🍫,🥕,🍋. Delicious!
