Channa dal is heavy for elderly. So I use urad, rice and methi seeds and half a cup of cooked rice(leftover) rather than pooha. And it always comes out crispy.
May be also doing this type of dosa batter but I'm little quantity added fenugreek ..you're the wonderful chef making softy spongy crunchy dosa varieties batter recipe thank you so much

Because the urad dal has to be grinded too long and rice has to be grinded for a short time. The rice batter should be somewhat grainy and not too smooth.

I used chana dal a few times and it made the dosas way too brown. So stopped using. Now I just use idli rice, methi seeds and urad dal.
