Perfect Dosa + How to season an iron tawa Prep time: 10-15 minutes (active) | 4-5 hours for soaking & 10-12 hours for fermentation (passive) Cooking time: 5-10 minutes Serves: 8-10 medium sized dosas Fermented Batter Ingredients: MOTI RICE / DOSA RICE | मोती चावल / दोसा चावल1.5 CUPS PARBOILED RICE | उकड़ा चावल 1/2 CUP GOTA URAD | गोटा उरद 1/2 CUP POHA | पोहा 2 TBSP FENUGREEK SEEDS | मेथी के बीज1 TSP WATER | पानी AS REQUIRED (FOR WASHING & SOAKING) COLD WATER | ठंडा पानी 1 CUP (FOR GRINDING) SALT | नमक 1/2 TBSP SUGAR | शक्कर 1/2 TBSP WATER | पानी AS REQUIRED (TO ADJUST CONSITENCY) Method: Transfer the rice & dal into a large deep bowl & wash them with water until the water turns clear. Discard the water & add in the poha & fenugreek seeds, add water then cover the bowl & let everything soak for 4-5 hours. Once soaked, discard the water & transfer the soaked mixture into a mixer grinder jar along with cold water & grind everything into a fine batter. Depending upon the capacity of your mixer grinder, you will have to do this in batches, make sure that the batter is of thick but flowing consistency, for this quantity you will need just a little over 1 cup of cold water, the cold water will prevent the mixer from heating up while grinding. Further transfer all the batter into a large & deep stock pot, add the salt & sugar to the batter & whisk for 2-3 minutes. Make sure you use a big stockpot because the batter will rise & double in size while fermenting. Cover the stock pot & place it in a warm area, the fermentation time will depend upon the weather, the batter should ferment in 8 hours in summers but in winters it might take up to 12-15 hours. Once the batter has fermented, stir the batter gently using a spatula or a ladle until it becomes smooth, add water to adjust the consistency of the batter, it should not be too thick not too thin. Your fermented dosa batter is ready. Instant batter Ingredients: SEMOLINA | बारीक राव 1/2 CUP RICE FLOUR | चावल का आटा 1/2 CUP POWDERED SUGAR | पीसी हुई शक्कर 1 TSP SALT | नमक 1 TSP CURD | दही 1 CUP WATER | पानी 2 TBSP BAKING SODA | बेकिंग सोडा A PINCH Method: Add all the ingredients into a mixer grinder jar & grind it until smooth. Transfer the batter into a bowl, add baking soda & mix well. Your one-minute, instant dosa batter is ready. (I would recommend you to make the fermented version as it is a lot more nutritious & healthier, but you can choose the instant batter when you don’t have the time to follow a long process) How to perfectly cook the dosa Ingredients: GHEE | घी AS REQUIRED Method: Set a dosa tawa over high heat & let it get medium hot (160 C), to check if the tawa is hot enough, sprinkle some water onto it, the water should sizzle & evaporate quickly. Make sure you don’t add the batter if your tawa is extremely hot or else the batter won’t stick to the tawa & if the temperature is too low then your dosa won’t cook properly. Once the tawa is at the right temperature, add a ladle full of the dosa batter in the center of the tawa, then spread it in a circular motion over the tawa. The spreading technique will determine the texture of your dosa. If you want the dosa to be crisp from the outside & spongy from the inside, spread the batter only in 3-4 circular motions, this will help to form the perfect spongy layer on the top. If you like the dosa to be crisp throughout then spread the batter in circular motion until it becomes thin & even. After spreading the batter, cook the dosa over high flame until the upper surface of the dosa is set, there should not bet any raw batter on the top. Then lower the flame to medium & add a few spoonful of ghee on the dosa. Cook until the edges of dosa turn golden brown. Once cooked use a spatula to separate the dosa from the tawa by gently sliding it underneath the dosa & fold it. Your perfectly cooked dosa is ready, serve it with some coconut chutney & hot sambar. How to season an iron tawa Seasoning is a process that helps to form a layer of naturally nonstick coating on iron cookware. This layer of nonstick coating lasts much longer than an artificial Teflon coating & is also toxin free. If the seasoning of your pre-seasoned or un-seasoned iron cookware wears off (the seasoning will only wear off if you don’t take proper care), you can follow a few simple steps to season or re-season the cookware. Steps to season / re-season iron cookware Wash the tawa using mild soap & water, make sure that its clean & do not use steel wool to scrub the surface. After washing, wipe the tawa using a clean kitchen towel & place the tawa over medium flame for a few seconds just to get rid any moisture present then switch off the flame. Add a teaspoon of any cooking oil on the tawa & spread it on the entire surface using a muslin cloth or a paper towel, the layer of oil should be extremely thin. Switch on the flame to medium & let the tawa heat up until it starts smoking, then switch off the flame & let it cool down to room temperature. Now depending upon how much seasoning your tawa requires you will need to repeat this process a few more times. If you are just re-seasoning a tawa then doing this process 1-2 times would suffice, but if you seasoning a tawa from scratch then repeat the process 4-5 times until an even black, smooth layer is formed. Once you have repeated the process & the tawa has cooled down, heat it up again over high flame then add a tablespoon of oil & one sliced onion, stir & spread the onion slices over the surface & cook them over high flame until they get charred, stir at intervals & make sure that the entire surface of the tawa is exposed to the onion slices. Discard the burnt onions, splash water on the tawa & wipe it clean using a kitchen napkin. Your perfectly seasoned iron tawa is ready. After using the tawa or any iron cookware, wash it using mild soap & water, dry it completely by wiping & heating it for a few seconds, apply a very thin layer of oil on the entire surface & then store it, this will prevent rust & also help to maintain the seasoning. The seasoning will keep getting better the more you use it. Happy Cooking! :)

OMG....I have explained soooo well....I love dosas......andy dosas come out in bits and pieces......and this is how I eat my dosas. I love south indian food in my breakfast or any time in the day. I love to cook dosas and tried new variation in it. South Indian foods are very good for gut health as they are made after fermentation process which help in easy digestion. Mera beta bhi kuch banana he to aap ka you tube vedio dikhata he. 15 days before i tried misal pav vedio it comes out very tasty. Really pehle me try nahi kiya tha tiger masala lekhe aati thi. Vedio dekhne ke baad decide kiya aise hi banati hu. Very delicious food.

Great brother this is the real one side roast, this is the real Mysore butter/ghee dosa. Many people think only paper dosa has that roasted texture No no no, you are a great dosa maker. You only could prove that even a sada dosa or plain dosa can be made one side crispy or roasted

Nicely explained 🙏 We can use the thick raw cast-iron tawa also . Only the preparation by rubbing with brick , then wash it and seasoning with oil and onion is same . That tawa costed me Rs 400 only .

Perfect Dosa + How to season an iron tawa
Prep time: 10-15 minutes (active) | 4-5 hours for soaking & 10-12 hours for fermentation (passive)
Cooking time: 5-10 minutes
Serves: 8-10 medium sized dosas
Fermented Batter
Ingredients:
MOTI RICE / DOSA RICE | मोती चावल / दोसा चावल1.5 CUPS
PARBOILED RICE | उकड़ा चावल 1/2 CUP
GOTA URAD | गोटा उरद 1/2 CUP
POHA | पोहा 2 TBSP
FENUGREEK SEEDS | मेथी के बीज1 TSP
WATER | पानी AS REQUIRED (FOR WASHING & SOAKING)
COLD WATER | ठंडा पानी 1 CUP (FOR GRINDING)
SALT | नमक 1/2 TBSP
SUGAR | शक्कर 1/2 TBSP
WATER | पानी AS REQUIRED (TO ADJUST CONSITENCY)
Method:
Transfer the rice & dal into a large deep bowl & wash them with water until the water turns clear.
Discard the water & add in the poha & fenugreek seeds, add water then cover the bowl & let everything soak for 4-5 hours.
Once soaked, discard the water & transfer the soaked mixture into a mixer grinder jar along with cold water & grind everything into a fine batter.
Depending upon the capacity of your mixer grinder, you will have to do this in batches, make sure that the batter is of thick but flowing consistency, for this quantity you will need just a little over 1 cup of cold water, the cold water will prevent the mixer from heating up while grinding.
Further transfer all the batter into a large & deep stock pot, add the salt & sugar to the batter & whisk for 2-3 minutes.
Make sure you use a big stockpot because the batter will rise & double in size while fermenting.
Cover the stock pot & place it in a warm area, the fermentation time will depend upon the weather, the batter should ferment in 8 hours in summers but in winters it might take up to 12-15 hours.
Once the batter has fermented, stir the batter gently using a spatula or a ladle until it becomes smooth, add water to adjust the consistency of the batter, it should not be too thick not too thin.
Your fermented dosa batter is ready.
Instant batter
Ingredients:
SEMOLINA | बारीक राव 1/2 CUP
RICE FLOUR | चावल का आटा 1/2 CUP
POWDERED SUGAR | पीसी हुई शक्कर 1 TSP
SALT | नमक 1 TSP
CURD | दही 1 CUP
WATER | पानी 2 TBSP
BAKING SODA | बेकिंग सोडा A PINCH
Method:
Add all the ingredients into a mixer grinder jar & grind it until smooth.
Transfer the batter into a bowl, add baking soda & mix well.
Your one-minute, instant dosa batter is ready. (I would recommend you to make the fermented version as it is a lot more nutritious & healthier, but you can choose the instant batter when you don’t have the time to follow a long process)
How to perfectly cook the dosa
Ingredients:
GHEE | घी AS REQUIRED
Method:
Set a dosa tawa over high heat & let it get medium hot (160 C), to check if the tawa is hot enough, sprinkle some water onto it, the water should sizzle & evaporate quickly.
Make sure you don’t add the batter if your tawa is extremely hot or else the batter won’t stick to the tawa & if the temperature is too low then your dosa won’t cook properly.
Once the tawa is at the right temperature, add a ladle full of the dosa batter in the center of the tawa, then spread it in a circular motion over the tawa.
The spreading technique will determine the texture of your dosa.
If you want the dosa to be crisp from the outside & spongy from the inside, spread the batter only in 3-4 circular motions, this will help to form the perfect spongy layer on the top.
If you like the dosa to be crisp throughout then spread the batter in circular motion until it becomes thin & even.
After spreading the batter, cook the dosa over high flame until the upper surface of the dosa is set, there should not bet any raw batter on the top.
Then lower the flame to medium & add a few spoonful of ghee on the dosa.
Cook until the edges of dosa turn golden brown.
Once cooked use a spatula to separate the dosa from the tawa by gently sliding it underneath the dosa & fold it.
Your perfectly cooked dosa is ready, serve it with some coconut chutney & hot sambar.
How to season an iron tawa
Seasoning is a process that helps to form a layer of naturally nonstick coating on iron cookware.
This layer of nonstick coating lasts much longer than an artificial Teflon coating & is also toxin free.
If the seasoning of your pre-seasoned or un-seasoned iron cookware wears off (the seasoning will only wear off if you don’t take proper care), you can follow a few simple steps to season or re-season the cookware.
Steps to season / re-season iron cookware
Wash the tawa using mild soap & water, make sure that its clean & do not use steel wool to scrub the surface.
After washing, wipe the tawa using a clean kitchen towel & place the tawa over medium flame for a few seconds just to get rid any moisture present then switch off the flame.
Add a teaspoon of any cooking oil on the tawa & spread it on the entire surface using a muslin cloth or a paper towel, the layer of oil should be extremely thin.
Switch on the flame to medium & let the tawa heat up until it starts smoking, then switch off the flame & let it cool down to room temperature.
Now depending upon how much seasoning your tawa requires you will need to repeat this process a few more times. If you are just re-seasoning a tawa then doing this process 1-2 times would suffice, but if you seasoning a tawa from scratch then repeat the process 4-5 times until an even black, smooth layer is formed.
Once you have repeated the process & the tawa has cooled down, heat it up again over high flame then add a tablespoon of oil & one sliced onion, stir & spread the onion slices over the surface & cook them over high flame until they get charred, stir at intervals & make sure that the entire surface of the tawa is exposed to the onion slices.
Discard the burnt onions, splash water on the tawa & wipe it clean using a kitchen napkin.
Your perfectly seasoned iron tawa is ready.
After using the tawa or any iron cookware, wash it using mild soap & water, dry it completely by wiping & heating it for a few seconds, apply a very thin layer of oil on the entire surface & then store it, this will prevent rust & also help to maintain the seasoning.
The seasoning will keep getting better the more you use it. Happy Cooking! :)

I love south indian food in my breakfast or any time in the day. I love to cook dosas and tried new variation in it. South Indian foods are very good for gut health as they are made after fermentation process which help in easy digestion. So I m really excited and looking forward to cook my dosas in Milton procook iron cookware range, healthy food in healthy cookware. I will surely make dosas first if I will get this. And one more interesting thing I have very deep connection with dosas because my mother ate dosas very frequently in her pregnancy journey when I was to be born. Aap banaya huva khane me bahut sare me try kiya. Bahut achchi se aaya. Mera beta bhi kuch banana he to aap ka you tube vedio dikhata he. 15 days before i tried misal pav vedio it comes out very tasty. Really pehle me try nahi kiya tha tiger masala lekhe aati thi. Vedio dekhne ke baad decide kiya aise hi banati hu. Very delicious food.

Great brother this is the real one side roast, this is the real Mysore butter/ghee dosa. Many people think only paper dosa has that roasted texture No no no, you are a great dosa maker. You only could prove that even a sada dosa or plain dosa can be made one side crispy or roasted

We can use the thick raw cast-iron tawa also . Only the preparation by rubbing with brick , then wash it and seasoning with oil and onion is same .

I will definitely going to cook DOSA in my style after spreading batter putting butter on top then finely chopped onion,tomato , a punch of red chilli powder ,garam masala and dash of lemon, then roll and cut into small pieces . Try this once you'll love it.
