Major city stockyards is what they're talking about. When I was young the radio would have daily market reports from Chicago, Kansas City, Omaha, etc. All "finished " animals were transported to the stockyard in a terminal market city. The 10 you know about are just country auctions, they've always been around also, but are now fewer & larger.

I swear he said OKC was the last surviving Stockyard in the US and then continued to try and explain it was. Couldn’t be true.
Can’t even get decent journalism about a non political subject in 2024 and it’s getting even harder to find every day. My family had owned and then sold 3 different Stockyards at different times in 2 counties north Alabama alone since the late 1970’s. I promise you Alabama alone has livestock markets aka Stockyards aka sale barns all over this great state just as most states do in this great nation. Heck they even still “allow” farmers in Europe to get the most competitive prices for their livestock via livestock auction markets.. at least in Britain and Ireland I know for sure. The fact that the average American school kid isn’t taught the process it takes to get food like beef from the farm/ranch to the plate in the broad strokes at least is why most people today… especially people in the cities that never even meet a farmer or rancher in their whole life doesn’t appreciate how hard it is to get that ground chuck in the grocery store. Therefore when farmers and ranchers need the support of their fellow Americans in Washington it falls on deaf ears sometimes.
