It's so wonderful to see someone show and explain how to use their freeze dried food! Some people use different equipment as a way to get views but never use the finished product, then sadly throw the food away because it won't get eaten. They just make the dried, dehydrated or canned food but that's as far as it goes. You are a true homesteader and waste nothing! Thank you for sharing your hard work and beautiful family with us.

Your pantry challenge is in true form and your standard to set that example for others is very much appreciated. Some hoard food and simply end up wasting it and that sets a terrible example. You waste nothing....the liquid from the beans to use as egg replacement. Such a good thing to know about with the high price of eggs. Being very frugal and not wasting anything and trying to find usage for everything is quite commemorative, I dislike food waste myself but I don't always find ways to use up leftovers but I try, I'm a single eater and I don't usually make too much food for myself, truly enjoyed watching this, thank you! 😊

One of my boys did some experiments using natural dyes for muffins. Someone asked us about hibiscus powder knowing we had used it before. He tried hibiscus powder, beet juice, and beet powder. Beet powder gave the best results.
Those meatballs looked so wonderful. Most of us will use something like bread crumbs as the filler. Using those veggie powders can turn them into flavor bombs. So yummy looking

It's been so difficult to try to switch out butter esp. When I used butter in lots of things. You give me so much information and ideas. Hope you have great week! TFS!

Good morning Jessica! I've been dealing with clearing pantry items during the challenge. Yesterday I actually boxed empty canning jars, as I won't be refilling them before growing season. We are preparing to move and hope to be able to get a property with some land attached. My twins (on the spectrum) will be moving into my home after our court hearing on March 21, and we will need more space, not only to grow our food, but also to allow them room to escape one another periodically. I had FOUR flats of canning jars sitting on the kitchen table! Then I had a plumbing leak and the handyman is arriving this morning to fix that mess. He asked for homemade bread, so there are two loaves that just came out of the oven to repay his kindness. He remarked that he was going to come and repaint everything so I get top dollar on my home, and so I'm going to be going through the house while he is working this morning and packing up things that sit out or are hanging on the walls. I can do that while he works, and eliminate clutter for him while he is painting.
My eldest son wanted veggies with his chili last week, so I put out a platter of home canned pickled red beets, banana peppers and dill pickles. I also emptied a jar of olives that had probably been in the frig since Thanksgiving. Those empty jars were part of the four flats of jars that needed to leave my kitchen yesterday.
My students were hangry on Wednesday, and I had run out of snacks to feed them. I was wracking my brain, and didn't have butter or eggs at work. I did have cinnamon, flour, sugar, salt, cooking oil and yeast - so we mixed and baked (and eventually glazed) cinnamon rolls for them to eat. When strangers walk into our school and it smells amazing they are always amazed that my students are the ones preparing the food. Even my most picky eaters loved homemade cinnamon rolls - and one of my more challenging students made the glaze. He really enjoyed doing that. My staff looked at me in horror because I didn't even look at a recipe - if you know your proportions in yeast dough, you don't need a recipe. I made enough that we fed several other classrooms when we finished! On Friday my students made Becky from Acre Homestead's chewy sugar cookies which didn't need to be rolled out and made into cutouts. I LOVED them, as did everyone else who tasted them!
Today's Sunday dinner includes a pork roast, scalloped potatoes, steamed broccoli (from my freezer) and strawberry shortcake. The strawberries were put up last June for just this occurrence. I found an angel food cake mix (Mennonite grocery store purchase last summer) in the cupboard, so I'll bake that off shortly to serve with the strawberries. I also have a bag of romaine hearts in the frig from our spaghetti dinner at school, which the family will enjoy with lunch. I know my sons are enjoying choosing meals from what I have on hand, and I'm enjoying knowing that I will have less to move when the day arrives because we are eating what is here. I also have a little more disposable cash with which to pay the handyman because I am not buying groceries. I did have to go to the store yesterday, but bought only the ingredients I absolutely needed for dinner today - all of which were found in the dairy aisle. I also had to purchase some cleaning supplies as I need those for preparing the house for the upcoming move.
I'm starting to run low on flour, but not on spices or sugar. I do have oats in the freezer that could be made into flour - and may yet be, as I do not plan to grocery shop until after the move if I can avoid it. Thank you again for inspiring this challenge!

Yep, zero waste. Grew up country and that's how the ancestors did it in many cases had to do it. Everything but the squeal as they say.
One thing I learned on accident is that wrinkly apples from late winter if they don't have rotten spots are still good. The shrinking and wrinkling concentrates and ages the juice Juiced out sugar beets we grew with the shrinkly apples boiled them to a syrup, and spiced it. It was amazing.

I really love how you take the basic elements of something and just add to it. I've always cooked like this but never baked like this. You are really changing the way I bake. It's also really liberated me to use my sourdough discard for pan fried flatbreads to serve with my hummus. I'm trying the vegan mousse this weekend thank you!
