Love the bundt pan idea. That’s gonna come in handy… I’ve been doing peppers, all my kale, collards ( looking for different ways here with these collards). Peas, beans and some carrots My corn isn’t ready yet, have been raiding the potatoes twice a week for suppers - here on the Atlantic coast- our last frost is early June with about a week or so of CHANCE of frost ( and it happens here n there ) so the entire gardens aren’t all planted until the end of June. Late in and late out. Fall is reverse, about 2 weeks of CHANCE of frost before what we call the BIG one hits.) You’ll be fine your every bit counts and I’ll still be harvesting and canning. 😄 BUT I save your videos 👍 We don’t have Ball we have Bernardin and I like your veggie soup better I think. Not only is this prompting so many people to preserve and fill up our stores-everybody loves a challenge-the genius part is that supposedly it takes 21 days to form a new habit, so for lots of us, this carries on throughout the year. Have a friend that I am doing the challenge with and we are enjoying it! This week I dehydrated frozen stock solids that I went through before freezing and took all bones out. Put it through the blender and on to silcone sheets for dog food. Sprouted pecans, walnuts and hazelnuts and dehydrated- great tasting crispy nuts. Harvested chokecherries and put in freezer, made ghee from butter in freezer, dehydrated and powdered my garlic harvest, powdered my little ristra of hot peppers from last years garden, made 3 pints of mango salsa, 3 pints of carrots and 1 pint turnip- I had never done a mix like this in the pressure canner but a great way to can those little bits. Made zucchini chips , made a ginger bug, and dehydrated some misc herbs. Wow those little bits did add up! THanks for doing this challenge!!

This week for us has been all about figs. Fig preserves, fig compote, fig jalapeño jelly, strawberry fig jam, fig butter! More tomato projects and apple pie filling. Also a small amount of maple pear jam.

For shredded carrots and zucchini, I bag them in 2 cups (most recipe calls for 2 cups) in freezer bags. Easy and convenient for people that can't afford a freeze drier

Now I feel the need to go buy corn. I just ordered a bulk of pomona's from their site, $2 cheaper than azure and no shipping (or free maybe with my amount ordered). I've never used it but know its great because you can use less sugar.
Sunflower petals are pretty in a tea blend. I make tea for my extended family as gifts every year consisting of mint, chamomile, lavender, peony, bachelor button, rose petals and sunflower petals. It’s beautiful. Lemon balm, rose and sunflower petals make a nice, happy tea. You can also toast sunflower seed shells to add a depth of flavor to tea. I like them with Temperance Tulsi. I also make a lovely freeze dried mango, dried orange slices, skullcap and hops tea. If anyone grows hops out here, it’s great for a sleep tea or stress. I find a lot of joy in making teas from things I’m already growing. I think it applies as every bit counts, right?
Great idea for the carrots! I’ve done my zucchini that way for zucchini bread ever since I got my harvest right, but it never once even occurred to me do this with carrots.
We had company for a big meal today including corn on the cob. After working all day and the excitement, I was tired! There was so much left over and lots of corn on the cob. My normal routine is to strip the cobs and freeze the corn which I did and wanted to sit and watch videos. I was going to throw out the cobs but I remembered that some people used them for jelly and said I would research it and if I didn't find something then I would throw them out. The first video I watched is this one and SO HAPPY that you did the jelly. I'm getting mine stuck in the refrigerator to begin making the jelly tomorrow. THANK YOU FOR this video so much!
I have been making corn cob jelly and syrup for about 10 years or more. Last year I tried corn cob dark syrup and it too is good! Like you I try to have no waste! It really saves alot of money especially with your family of 10! Love watching you and your ways to save! THose children love to help! Blessings to your family!

Thank you for this video. We are going to get serious about our garden next year, and while discussing which things to grow, we briefly talked about corn. We’re with you. We can get fresh corn all summer long less than a mile from our house. We’ll save our gardening for other things that are harder or more expensive to access locally. Another great video, Jessica!
I think next year I’m coming to Ohio to get corn. Here in southeast Missouri the farmers wanted $5.00 for a dozen. They wouldn’t sale me several bushel. I told them to keep it at that price. Your corn look so yummy.
I found some packages of mushrooms on clearance at my local grocery store so I pressure canned mushrooms for the first time! I’ve also tried 2 recipes for canning my cherry tomatoes. I got some apples on sale and I have apples in my produce drawer in the fridge that need used so I think I’ll make some apple sauce and apple butter.
I saw a video where they boiled the corn cobs in milk or cream and eventually turned it into sweet corn ice cream ...I thought it looked amazing ..what a treat to use every bit of goodness from the corn...

I plan on making veggie stock using corn cobs this year. We do not eat much Jelly and jam anymore as my kids are grown but your corn cob Jelly sounds amazing.
So far I’ve done cherry juice, cherry jelly, bing cherries, spaghetti sauce, freeze dried strawberries, raspberry cordial and cherry pit vinegars… I’m prepping to make sour cherry pie filling and canning up some chicken… yay! Love this challenge!
That soup looks delicious! I don't grow pinto beans or NM green chiles at my house because they are just so massively cheap & available here. I grow other stuff! Also, I recently bought a food mill - new. It had been on my wish list. It's cool! Just used it for the 1st time.
We love to buy the organic fruit in the freezer section of Costco for the freeze dryer. It’s the best price we can find and we devour them! The mango is our favorite. That keeps our freeze dryer pretty busy over the winter.

I had forgotten about corn cob jelly. My grandma used to make it all the time. Ill have to make some this year. This week is all about herbs, peppers and eggplant for me. I got the Oxo corn cutter of Amazon and it works great you pull it towards you and I don't have any problems with corn flying. I make corn cob syrup too it is realy good

The gardens are beautiful! Preserving something everyday of the entire month is such a great idea. I love that idea for a bigger garden. I had frozen okra once and that was enough...lol. I think it's the only vegetable I don't like. That sunflower though, is beautiful (the one showcased at the start of the video).
Cool, I love how you use everything you can. I am trying that myself this year. I skimmed off the extra liquid from my tomato spiced tomato sauce and I am going to can the juice, as well as tomato sauce and meatballs, and I am going to dry the skins to make a tomato powder. Hoping to use most of the tomatoes. I do sift out the seeds after it is dried and powdered but those are the only thing I don't use from the tomatoes. Thank you for inspiring me to use as much as I can.

I was just wondering if you ever scraped your corn cobs after you've already cut the kernels off. You get so much of the good milk and when you go to freeze corn which is what I do it makes the best base for your vegetable when you put it in the freezer.
I make corn fritters. I just make up a batch of biscuit batter and the corn and if needed I the thin it down by add more milk. My family love them and they reheat well too.

Corn cob jelly also makes a great glaze for a pork roast. Slather it on when the roast is about 10 minutes from being done.

Yesterday was a busy day. 31 pints of corn, 5 qts green beans along with 1 pint and 14 qts of tomato sauce!!

We season okra with cajun seasoning before drying and eat them as snacks. They’re a nice consistency and they satisfy cravings.
Do you freeze dry or dehydrate? I dehydrated some and also used it as a snack. So good and good for you.

I found one of vintage juicers at the goodwill for 3.00. It didn’t have the wooden masher but I an confident I will find one.

My chickens scratch around for the bugs and culls, but they don't actually eat the husks. Do yours eat them?

I planted a late garden so we aren't getting much to can but.. to follow you i have been planting something new every day for the fall garden... Radish, turnips, lettuce , all in small batches . I love your videos always so creative !! I cant wait to make your soup ❤❤❤❤❤❤

Freeze dried sweet corn makes a great snack. So yummy.
I had forgotten about corn cob jelly. My grandma used to make it all the time. Ill have to make some this year. This week is all about herbs, peppers and eggplant for me. I'm making pickled peppers, cowboy candy, dried yarrow and calendula, babaganoush and a small batch of pizza sauce. Have a beautiful week!!

I only had a few small eggplant so I just made some for fresh eating. I haven't ever had a productive enough garden to can some. I hope it works out for you!! @@vswild7005
I got the Oxo corn cutter of Amazon and it works great you pull it towards you and I don't have any problems with corn flying. I make corn cob syrup too it is realy good
I just got one of the cones and a food mill as we are going through my mother in laws stuff. She used to can and freeze a lot.
The corn recipes looked so yummy. Can you grind some down into corn meal? Fresh cornbread would be so delicious. Thanks for all the great ideas for using corn. I have never tasted corn jelly. But may have to try to male some when snd if I can get some fresh sweet corn for cheap. This challenge has been so fun watching you and Sarah @ Living Traditions Homestead. Great video Jessica. That is one thing I do miss about moving up north, is corn. We have a hard time growing it here as the season is so short. You pantry is starting to look great. 🌷🇨🇦❤️

Im so glad you mentioned the dehydrate verse freeze drier. I think alot of people get caught up on the thought that they don't have a freezer drier now what. I also love the thought of grating and dehydrating carrots. I'm going to give this a try! Thank you for all you do. You have a beautiful family!

I am so glad to see this video on your corn preservation. I buy our corn from a local homestead and it is the best. My family loves corn and they could eat it at every meal. I will be canning the street corn soup when the fall corn becomes available. Thank you for sharing.
Cooked potatoes are very good freeze dried. I salt or place garlic powder on them before I freeze dry them.

The gardens are beautiful! Preserving something everyday of the entire month is such a great idea. I love that idea for a bigger garden. I had frozen okra once and that was enough...lol. I think it's the only vegetable I don't like. That sunflower though, is beautiful (the one showcased at the start of the video).

Cool, I love how you use everything you can. I am trying that myself this year. I skimmed off the extra liquid from my tomato spiced tomato sauce and I am going to can the juice, as well as tomato sauce and meatballs, and I am going to dry the skins to make a tomato powder. Hoping to use most of the tomatoes. I do sift out the seeds after it is dried and powdered but those are the only thing I don't use from the tomatoes. Thank you for inspiring me to use as much as I can.
Looks excellent. Good grab Adam! Might have to try that soup. I am curious about the cob jelly, that's for sure. I typically make a big batch of corn relish along with just canning as a vegetable. Good job.
I was just wondering if you ever scraped your corn cobs after you've already cut the kernels off. You get so much of the good milk and when you go to freeze corn which is what I do it makes the best base for your vegetable when you put it in the freezer.

I made sweet corn cob jelly for the first time this summer. Love it!
I make corn fritters. I just make up a batch of biscuit batter and the corn and if needed I the thin it down by add more milk. My family love them and they reheat well too.
I’ve never tried corn cob jelly nor have I had the opportunity to. Sounds interesting. The soup looks delicious!
