Welcome to Day 11 of Cooking 15 Street Foods for 15 Days, and today we are making Korean Cheesy Potato Pancake - Hotteok that only requires FOUR simple ingredients! Who doesn’t love potatoes and cheese? When combined and pan-fried till golden brown, these Cheesy Potato Pancakes are irresistible! These pancakes are vegetarian-friendly, and anyone at any age will love them! If you are lactose or dairy-free, you can also use vegan cheese as well.

    Im going to make this tomorrow 2.
    Update: OK I made the korean potato pancake today & my husband told me to write down the recipe so I don't forget. 😊 I made some with garlic & others without. He liked the ones without the garlic. I was shocked - I thought for sure he was going say he liked the garlic ones better. Now I'm not too sure myself. All I remember is that I liked them both.
    But for sure, we both thought it needed salt. After looking at the recipe I knew for sure I would want some added salt. So I added some to the batter. But after tasting it still needed more, so I simply sprinkled some on top before serving immediately. Notes: Recipe makes about 6 pancakes. Shred mozarella

    Made this this morning for breakfast & have notes:
    - There's a taste thats kind of throwing me off, I think its the sugar? I might use less or none next time. I think my brain is expecting it to be more savoury than sweet & the sweet is interfering
    - I saw someone recommend salt - wholeheartedly agree
    - Saw someone else suggest shredding the cheese - I tried that and it made the final product very flat. Would recommend just using cubes of cheese like she said
    - Finally, the mozarella is kind of bland in this, next time I think I'll try a cheese with a sharper flavour - either an aged white cheddar or a nice swiss
    Only other changes I made was I added the garlic salt & black pepper, could have used more of both I think. Not a hard recipe to follow though & made for a nice breakfast thank you for inspiring me to cook today 💜

      The sugar is because of term danzzan from Korea. Means "sweet salty" (the salty part is prolly the cheese).

    Okay guys, i here to help.
    The general rule is for every 100g of Potato; you want to add 1.5 tbsp (table spoon) of Rice Flour. To ensure that the potato isn’t overly mushy, I recommend steaming the potato rather than boiling it. Slice the potato into 1-inch slices and steam for 20 minutes or until soft. Once it is soft, smash until smooth.
    Next, add sugar and rice flour and continue mashing until everything is thoroughly combined. BE PATIENT! It may take around 5-10 minutes until everything is smooth but TRUST ME; it’s worth it!
    You can add in any seasoning of your choice; I highly recommend garlic powder if you want to extra savory, or you can also incorporate any herbs of your choice. I also love drizzling chili oil on top, or I dip them in ketchup as well. It is your potato pancakes, and the options are endless!
    Upd. Thats NOT MY recipe, but i share it with you so you all can at least understand how much flour you should add. I hope it helps C:

    I tried this and since I didn't have the amount of flour or sugar it came out a mess. I wasted my potatoes.
    Why is it so hard to write the recipe on the comment?

      It isnt, but just see the consistency you reach vs others reach. Add your flour till it forms a dough and looks like mashed potatoes. U can roll it and flatten it and if it breaks or cracks a lot then its not done. If there are only small cracks on the end when u flatten it then its good to go.

      ​@@salt5711I tried this twice and unsuccessful. It was too sticky. And working the dough for 10-15 minutes or more didn't help. What am I doing wrong? Like it was sticky and I did stick to the measurements. Adding the corn flour made it even more sticky...so it was all wasted.

      @@Sas-rf9sy I'm not sure but I think using cold water can melt it because it can cause gluten to leak out. It can also be because of high humidity which makes the dough absorb the water or liquid before actually mixing it. I took this information off Google but these are the only probably reasons I found.

      @@Sas-rf9sy Also maybe try cornstarch. Corn starch is starchy while cornflour is a protein based flour.

      @@salt5711 thank you, so much. I didn't use any liquid...was I supposed to? I will have to check if what I used was corn flour or corn starch. For the second batch I simply substituted the corn starch for regular flour. While it gave a better result, still it was sticky, 1/3 of the dough clung to my hands. I was so looking forward to trying these as we were having guests. But all in vain. Did you also have to work the dough for like 15 minutes or more? And is stickiness a normal thing foe this dough? I did not add ny fluids. Only the mashed potatoes and corn and then potatoes and flour. I definitely ended up using more flour than the measurements due to stickiness.

    So I tried this but this was not successful at all. The first batch was discareded as it was eay too sticky to work with. The second batch was also sticky and it was not possible to properly make the balls/patties as they stuck to fingers and the filing just kept coming out.
    So frustrating. Did somebody else have these issues and how to avoid them? I spent quite a long a time working on the dough but it was just not coming together and both sticky and hard making it difficult to mix together...

      perhaps you didn't have enough flour or you didn't drain all the water after boiling potato's?? You need enough flour to make a dough, It also helps to pre rinse the potato's just after cutting them cause this gets rid of alot of starch ( cold water just for a few minutes)

      I wouldn't recommend regular flour, do either rice flour or corn starch. With normal flour the mixture is clumpy and falls apart when you add the cheese

      The variations are limitless.
      ** Add spices of choice +/-
      ** Flour of choice like corn starch, chickpea flour, bread crumbs, almond flour +/-
      ** Even veggie chunks diced well or pureed (drain water from veggies like onion, zucchini or can dehydrate leftover veggie broth chunks then pulse) +/-
      ** Minced meat of choice +/-
      ** Add cheese in the mixture as well as separately.
      Can make it with any amount of ingredients desired. 😊

    Поздравляю, вы изобрели зразы с сыром. Лучше конечно добавить к сыру зелени, укропа, петрушки, лучка, вкус будет более насыщенным, но главное не переборщить, иначе вкус сыра забьётся, а ещё туда можно положить фарш, или грибы.
