- Semla is a Swedish pastry with a delicate texture and a pleasant taste. It's famous in Sweden and Scandinavia, and eating it on "fettisdag" (Fat Tuesday) is customary.
Suggestions:
- If you have allergies, you can omit the almond cream.
- You can serve tea and coffee alongside this semla.
- If you prefer, you can make smaller buns and bake mini semlas (semlor).
Ingredients
Semla buns:
* 3 tsp dry yeast
* 2 cups room temperature milk
* 3/4 cup granulated sugar
* 6-7 cups all-purpose flour
* 150g softened, room temperature unsalted butter
* 2 larg eggs
* 1tsp cardamon
* 1ts salt
* 1 egg + 1tsp water + a pinch of salt to brush on the buns
Almond paste
* 1 1/4 cups sweet almonds
* 3/4 cup icing sugar
* 1 pinch of salt
* 1/2 ts vanilla
* 3tsp water
Decoration:
* 2 1/2 cups whipped cream
* powdered sugar for decoration
