You couldn't call in Austria vs Denmark because Holstein is a member of the HRE, and since they're Denmark's vassal the game automatically sets them as a co-beligerent and you can't call the Emperor when declaring on princes.
what you can do is get delaskogen from sweden and make it your capital. then complete the mission that changes the trade good in your capital to gold. +9 goods produced from delaskogen monument gives you 80-90 ducats from gold.
Not worse, gold can vanish, so you need to save game scum, to keep the income. Better vassal Sweden, get 100% trade power in Baltic, and push normal chopper with +9 production and merchant republic +50% goods produced on your vassal, and than go vassal income ideas, and steal 85% of there income as vassal fees.

As Lübeck, Irland? Is relative easy. You can outnumber and defeat Dansk in the first war, and can claim there Norway territory next to Scotland. Than Scotland is big enough for rivalry, so that England will normally like and ally you. So you can run amok on the English island, and when you are strong enough, you use your mission and claim on London, to backstab the English and take over there trade node.

I'm doing my own A to Z challenge right now and am trying to form Westphalia (Aachen) and with frontiers from the south of France to the eastern part of Germany (which is Prussia and parts of Poland). This is kinda fun despite the insane difficulty of such challenge.
