- Smoked turkey in beans? Yes, it's so addictive!
Ingredients
3 Cups black-eyed peas
1 red bell pepper
1 medium onion
1 roasted Turkey wing
1 habanero pepper
1 Tbsp crayfish
1/2 Tbsp seasoning powder
1/4 cup palm oil or to taste
6 to 9 cups of water
salt to taste

i have been married to a wonderful nigerian american husband for almost 12 years now and this is my 1st time cooking this fabulous beans recipe. When he tried this, he loveeeed it very much and starts to ask me to do it more often. knowing that he is very picky especially when comes to his childhood food, his compliment makes my day. he even said that this beans tasted the best!! - i did mine about triple the amount. i omitted the crayfish because i dont have it on hand. i did mine in pressure cooker for about 18 minutes and with quick release. Hi Lola looks good I will be making this tonight with Smoke Ham. My husband used to have a problem with beans just soak it with Onions Garlic and GINGER the Ginger is the remedy there will be no more problems with soaked beans. Thanks for the video
You soaked the beans overnight with garlic and ginger? Or soaked in plain water over night and then cooked with ginger and garlic next day? 🤔

frm Jamaica made this today for Sunday dinner with jollof rice and fish ,and I fried ripe plantains to go with the beans porridge but I added only grounded crayfish no dried or smoked fish I didn't have time to smoke any and it don't sell in Jamaica

Looks lovely! It reminds me of a Ghanaian dish called red red we use black eyed beans , salted fish and our tomato base is fried, it’s more of a stew than a soup like this one

I eat beans daily and have taken Beano to help with gas, but I'm probably gonna be washing them too- thanks for the advice
Always wash soak and cook your beans with Ginger no more Gas

Lovely sister! That was very nice of you to teach this method. It’s amazing. But I will suggest you wash the beans after 10mins of cooking before adding anything in it. There you will be amazed to see almost black pesticides. I just want my sisters be aware, I don’t want anyone sick. Love you all!!!
You are right sis. I'm aware some have this issue (depending on location and type of beans). Thanks for chipping that in. I always use organic beans so I have no issues with the black water. I should have mentioned that in the video. 😊

I recently discovered a cube that kills heart burn in beans. .I also love plantain.

Its sold on in African stores, Amazon, Ebay, and Etsy...it's good to add it but you can skip it if you can't find it.

You need to smoke on wood/charcoal to get the smokey taste. Though you can play around to get similar effect like using the liquid smoke (sold in grocery stores) or place a hot charcoal in the oven (quite a risky but it works).

I find it difficult to find crayfish powder? what is the name of the brand you're using? also, what type of seasosing powder are you using? I really want to try this recipe!
Try Maggi seasoning cubes. If you want crayfish powder substitute you can get some whole shrimp (devein them) and put them on a baking tray and bake them (on fairly low) until they dry out completely. Afterwards, you can blend this into a powder and you are good to go! It’s just an umami addition and not wholly necessary but it does pack a serious flavour. I imagine you might even use some smoked paprika- just to give it a bit more depth
Amazing video. Please i don't know why my own never softens at all even after almost 2 hours of cooking it. Ps: I live in Italy and I don't know if it's the fault of the beans over here?! I even leave it in water overnight but still hard to soften

Cover the peas with water add a tbs of baking soda and 2 caps of bottle of the apple cider or regular vinegar. Also skim off the small bubbles or foam while they cook. This foam is gas.

Oh, it looks divine... is there anything that can be substituted for palm oil? It's very hard to get around here.
You can try Achiote (annotto) oil. It will not have the palm oil taste but will still be delicious.

Honey beans is a popular beans in Nigeria. It is naturally sweet tasting. Most people prefer to use it for stewed beans but for some reason my family likes the regular black eyed peas more. Its sold in African stores (cheaper) and you can also get it on Amazon (not so cheap). I hope that helps?

Please advise. When I soak the beans over night, in the morning the morning, they seem like they are sprouting... These black eyed beans take forever to cook... Please help🙃😢. How do cook it so smoothly...?
It takes about an hour to cook them soft on medium to high heat. The beans shouldn't sprout overnight but if that is the case for you, you can soak for about 4 to 5 hours.
You can also cook it in the crock pot, pressure cooker or instant pot. I hope that helps?
