He is denied the one woman he ever saw as his equal and truly wanted to be with and very well may have even loved which is a tragedy for the villain as he is not portrayed as being evil but just an opposing force and in many ways a worthy adversary. The original Chinese version of the story is far more interesting than the hack-job Disney gave it.
You missed the most interesting part about Undine! This is the first version I've heard without her curse. The knight said he'd think of her with every breath or some sappy crap like that just to get into her panties, and so when he betrays her in whatever way (this also varies, of course) she curses him to forget to breathe when he falls asleep. Undine's Curse is actually a term for a brain disorder that works pretty much the same way.
Interesting fact: Bluebeard is the inspiration for the Angela Carter story 'The Bloody Chamber', which is possibly even spookier than the original story

I first heard of Undine's story when I was looking for a Flute piece to play for credit for private lessons. I had heard the name BEFORE Undertale was a thing, but I hadn't heard the origin of it being, in a sense, a variation of the Little Mermaid. I heard the three surgeons tale as "The Three Doctors", and I have even told it for a campfire for a trip in high school. All the other ones I have heard of and knew of the darker versions. Rumpelstiltskin and The Frog Prince are two of my favorite fairytales from childhood, "ripping himself in two"/"decapitation" and all.
When I was in second grade there was a great book of Pinocchio in my teacher's bookcase. I loved it when I read it-and this wasn't the only Pinocchio book I read,but it was one of the longest. Later on I saw Walt Disney's Pinocchio...and saw it as just that:WALT DISNEY'S Pinocchio. When I was in third grade my Grandma gave me a 1914 edition of Pinocchio, which I treasure to this day.:-)

At the Back of the North Wind isn't a scary or dark story, it's actually quite beautiful. The focus isn't really death, it's what comes after death, in other words, Heaven. The title isn't talking about him riding on her back but going to the country at her back. The entire time he's having a near death experience and is getting closer and closer to God and to Heaven.
Undine is my favorite. Such a tragic that she had to endure all of that. All she wanted was love and happiness. If I was a script writer I would write a movie about her

That story with the north wind really makes the anime Unico seem a lot darker than they portrayed it. I assume it was a romatized version of that story, but with a chibi unicorn. Unico does seem like the type to enjoy the adventure so much he wouldn't care if she were takin his life slowly.

Bluebeard was and still is my favourite fairy tail. I grew up with it. I had a cassette tape that I`d listen to while trying to sleep.
I like the story of Undine.
