INGREDIENTS FOR BAH (FISH)
Two medium - firm whole fish, gutted & cleaned (recommended: tilapia, walleye, pompano, snapper, striped bass)
Salt
Vegetable/Canola oil to cover fish (we used 8 cups in a large shallow pot)
INGREDIENTS FOR PUN (WRAPS)
*ingredients will vary based on your family's taste
1 bag of rice noodles, prepared
12 cherry/grape tomatoes, halved
2 yard-long beans, sliced into 1" pieces
4 inch stalk lemongrass, thinly sliced
1/4 cup peanuts, dry roasted
2 inch nub of ginger, peeled and slivered
2 persian cucumbers, sliced into half moons
fresh thai chilies to taste, sliced or left whole
1 baby lime/small lime, thinly sliced and quartered into bite-sized pieces
1-2 bag of pork rinds (everyone's favorite!)
2 thai eggplants, thinly sliced and quartered into bite-sized pieces
1 head of lettuce (butter lettuce is also fantastic!), washed & strained
2 small wedges of cabbage, washed & strained
1 bunch cilantro, washed & strained
1 bunch mint, washed & strained
1 bunch culantro, washed & strained
1 bunch vietnamese coriander, washed & strained
1 bunch fish mint, washed & strained

omg no. I forgot! sorry. it's tamarind, sugar, padaek, fish sauce msg (optional), minced garlic, fresh cut chilies, ground red pepper and lime. I'll work on a test recipe next!

Love your stuff! I know you have a lot of recipes for jeow already, but do you have a recipe for jeow mak kua (eggplant jeow)?
i don't have a recipe for that but it's basically the same base ingredients (roasted garlic, shallots, peppers), just roast the eggplants! then season with salt, sugar, padaek and fish sauce :)

yes! so good with snapper as well :)
Are those eggplant raw?
yes. they're thai eggplants and we eat them as is (like a radish) with our salads and meals!
The only thing I hate about pun-pah, I keep telling myself this is the last bite but I end up sitting there eating for 2hrs😂
