    Excellent! I followed the recipe exactly using 230g of water and it was perfect. The only detail I altered was baking time because my oven runs hot and 19 minutes was good. Am using a good thermometer to bake until center is 200f. Placed rack near top of oven. This is great way to make bread for things like French bread pizza, garlic bread, and French bread to go with a meal.

    Made it today. Not perfect but it turned out a 8.5 out of 10. I either beat the dough too much or not enough.
    I don’t have the pan (yet). It didn’t crisp up as much as yours, but the bread was light and fluffy and tasted delicious my spouse loved it and so did I. Just a matter of time before I get it perfect. Thank you so much Amiee your instructions are so comprehensive. I was able to figure out where I might have gone off track. I am baking some more tomorrow 🎉

    Making bread never really works out for me. The crust is never quite right and the insides are not fluffy.
    I tried this recipe and it actually came out good. The insides weren't fluffy, but they weren't dense either. The crust was to die for, it was that good.
    I measured everything out by weight but the dough after 10 minutes of mixing was a sticky mess so I had to add some extra flour. Instead of 350g I wound up needing about 370g.
    I didn't have the fancy pan she has to bake this so I used an old pizza pan that had holes in the bottom. Worked pretty well.

    I've only been making bread for maybe a year. Never rolled mine out. I'm going to be trying this. I always had an issue with the bottom even being pinched coming apart sometimes more than others.
    My Nana always used to say, " There is 10 ways to bake a chocolate chip cookie." I love this method.
    I do have a kitchen aid pro, but i find kneading dough therapeutic 😂

    Hi Aimee I made your recipe today and it was the easiest version I’ve found. I followed your instructions to the t and came out great only I should have taken it out a couple minutes sooner as it browned too much but nonetheless it was great. I have not had regular bread in a long time as I am mostly eating keto these days but I couldn’t resist. I am also happy my husband enjoyed it as he has been my keto recipe taster and was greatly pleased this wasn’t keto 😊

    One thing I've found is that if I follow the measurements for the water and flour, it's too sticky. I wind up adding just a bit of flour to it.

    Hello Aimee, thank you for sharing. I have a question, does the dough need to be covered with plastic film or kitchen towel after it is shaped and transferred to the baking tray for its final rise?

      Yes, if there’s a lot of draft in your kitchen. However, sometimes it might be difficult to remove without causing the dough to deflate, so be extra careful. The ideal way is to fine a container large enough to place the tray in it and cover with a lid 😃

    After your dough rests and rises, what is the approx weight? Can I make 2 smaller loaves because like your tray,mine is too short to hold the loaf.
    I Also have an Emile Henry ceramic baguette pan which holds three loaves ( narrower it seems).Are there any differences in your baking time or tempering cermic?

    What is the bake time? I had it in for 20 minutes and then took out the steam tray and cooked for another 8. It wasn't golden brown like yours but felt hard so I thought it was too cooked. When I cut into it, the very middle was undercooked.

    Aimee, the King Arthur website gives the weight of a cup of bread flour as 120 grams, so 2 cups would be 240, not the 350 you show. Do you recommend using the measurements by weight rather than volume?

      I tried it measuring out 350 g of flour (I used Gold Medal) and 223 g of water. I was happy with the result. I'll try it again with King Arthur.

    If I want to cut them to French mini baguettes how many do u think u get cutting them?

    Dear I have no dough mixer and no bread flour..can I use normal flour?

      Hi. Yes, but from my experience the bread just isn’t as fluffy. If you do use regular flour, watch the water. Don’t pour the whole cup in at once, save a little. Chances are you might not need all of it. Secondly, you can knead it by hand. Might take a little longer but that also depends on how strong you are. Just compare your dough to the video and try to reach the same consistency. Good luck! Happy baking ❤️

    Hi Aimee: I am a little confused about the recipe. For example for flour your recipe says 350 grams (two cups). KA bread flour weighs 120g per cup. So 350 would be just shy of three cups. Help.

      Best thing would be to add the flour then slowly pour in the water until the desired consistency has been reached. 🙂

    I have no luck with this flour. I've used it for years but lately it makes my breads heavy and dense....even extra time to proof and the steamy oven doesn't help. I'm convinced it is the flour because it does this in every recipe. I was so excited for this recipe. It was a total flop for me. I'll try the King Arthur all purpose flour and try the recipe one more time. Wish me luck!

      Have you tried with new yeast? Has there been any changes in the environment? Anytime I have trouble getting my dough to rise, I immediately get brand new yeast and that has always solved my problem. Old yeast loses the ability to make the dough rise well. It will rise some in the beginning but it doesn’t have enough potency to last long enough to make the bread rise. Yeah, give this brand a try. It’s great. Good luck. Keep me posted. Hopefully you’ll find out what is causing the issue. ❤️

    Nice video. It is worth noting, though, that two cups of flour weighs aproximately 240-250 grams.

    how long is the rise??

      It’s about 30-45 minutes. I will say though, depending on the temperature in your kitchen, humidity, yeast quality, total time may vary. You can bake the bread when it’s about double in size, and soft/bouncy to the touch. 😁

      Sorry, I missed this one. My bad. You can use it but I wanted to create an authentic French bread recipe, therefore, I did not use it. It works out fine to omit in a French bread recipe because the texture doesn’t have to be super fluffy like my Banh mi. French bread tastes better when it’s a little more chewy and crunchy at the same time. It’s hard to explain 😂
