While at university I was a delivery driver for a place that made French bread and pastries. They used this type of perforated pan! They also had steam ovens. Bakers hours are hard! Those guys started working at 2 am! Whew! I found a similar pan on Amazon US, congrats UK sold out! I also finally bought a scale. You are the second cooking show this week to use a scale for measurements. I found one that won't take up that much space in my RV, same brand as yours only flatter and easy to read. Happy cooking :)

John, this is the best recipe for baguettes I’ve ever found! Your instruction is excellent. I followed along and produced bakery-worthy loaves. The second time, I put the dough in the fridge overnight for a little cold ferment, and the results were equally outstanding. I prefer the couch-and-baking stone method to the pan. I can’t thank you enough for this recipe. Now, instead of paying $4 US for a single, not-bad baguette, I’m paying about $2 for 3 loaves that we can have whenever needed. I freeze par-baked loaves and finish them when needed. Thank you so much!

Another winner here! I made this the same time I made Chili. The four proofing's were a breeze. Just like walking and chewing gum at the same time, Easy! I served it with the Chili. Next the wife and I removed a lot of the crumb to create a cavity and filled it with chicken salad, WOW! Lastly we had it with my chicken and dumplings, Delish! Not only is this easy to make, but it taste great. I think that I am most impressed at how flavorful and tender this baguette is. Most, if not all baguettes I find way to tough and chewy. Hot out of the oven this had tremendous crispness, so good! This is definitely a keeper. I did the math and made three baguettes because that was the only baguette pan I had. Thank you John for another keeper, excellent, tasty, tender, versatile and easy!!

Love the Baggett tray... I've been using one for a couple of years now... The bottom gets a nice color. I half the recipe and it turns out perfectly... Only me and I don't need or want to be a two ton Tessy... One ton is enough 😉... Thanks John... FYI, any of my friends or family that want to learn to bake bread, I send them this video... I got that metal baguette cooking tray it made it a lot easier to transfer bread to oven. I use to use a linen baker's couche and the transfer board but the metal tray is so much easier I highly recommend it. I use it also to make short hoagie rolls as well, I can get eight 7-8" rolls using it, that is two rolls end to end per trough. I also use it for ciabatta rolls. Once you begin using it you will find other uses as well.

Hey John, I tried activating some yeast (dried in sealed sachets) which was rather old, 1st one at 40c as per your instructions, second one I also activated in a pyrex measuring jar at 35.5c floated in my sous vide machine, went into overdrive in terms of cell production, whilst my yeast was old (still worth a try) I always use a thermometer (as I also brew) worth mentioning that yeast strains differ greatly, so regardless check the packet (which I forgot to do as I was following & pausing your video) ,,anyway great success. NOTE, if anyone buys summer fly traps that are filled with water & a mysterious sachet, (the sachets are not cheap) it is essentially cheap bread yeast & a yeast feed, works out cheaper to get the yeast feed at a home brew shop ;) ..keeps the area outside your door much clearer of summer fly misery (& a better kitchen environment. cheers

So John I'm a mother ,today I didn't have bread ,but was blessed to have found some yeat packet I had bout a few month ago , I had flour and got to doing this recipe and I must say it's my first time making bread let alone a bagette love yourrecipe started at 6 and I'm on thr last prices about to make my bagette I dont have a bagette tray but have glass water so that's what I'll be using today which is the longest ware I have if I can manage to get this bread going I will continue to bake bread love you channel John ,also my son's name is ♥️John III ♥️

Oh, they turned out great ebenso I think my dough was slightly too dry as we had 45 grad Celsius yesterday and also I used warm water for the starter and given the room temperature it was maybe a lot overkill for the yeast. Next round I will be a bit more intuitive on these parameters as I know now how the dough needs to feel in the different stages. Also I slashed them 4x before the last rise on my baguette tray and then I saw it’s supposed to be the last step. Despite these minor issues it went quite well and my family enhaled them. Will definitely do this on a weekly basis now ❤️

Very interesting, I use a different technique that takes 8hrs proving, no folding. It’s a simple method but makes perfectly fine baguettes. I think I’ll give your method a try it looks wonderful

While at university I was a delivery driver for a place that made French bread and pastries. They used this type of perforated pan! They also had steam ovens. Bakers hours are hard! Those guys started working at 2 am! Whew! I found a similar pan on Amazon US, congrats UK sold out! I also finally bought a scale. You are the second cooking show this week to use a scale for measurements. I found one that won't take up that much space in my RV, same brand as yours only flatter and easy to read. Happy cooking :)

John, this is the best recipe for baguettes I’ve ever found! Your instruction is excellent. I followed along and produced bakery-worthy loaves. The second time, I put the dough in the fridge overnight for a little cold ferment, and the results were equally outstanding. I prefer the couch-and-baking stone method to the pan. I can’t thank you enough for this recipe. Now, instead of paying $4 US for a single, not-bad baguette, I’m paying about $2 for 3 loaves that we can have whenever needed. I freeze par-baked loaves and finish them when needed. Thank you so much!

Another winner here! I made this the same time I made Chili. The four proofing's were a breeze. Just like walking and chewing gum at the same time, Easy! I served it with the Chili. Next the wife and I removed a lot of the crumb to create a cavity and filled it with chicken salad, WOW! Lastly we had it with my chicken and dumplings, Delish! Not only is this easy to make, but it taste great. I think that I am most impressed at how flavorful and tender this baguette is. Most, if not all baguettes I find way to tough and chewy. Hot out of the oven this had tremendous crispness, so good! This is definitely a keeper. I did the math and made three baguettes because that was the only baguette pan I had. Thank you John for another keeper, excellent, tasty, tender, versatile and easy!!

I got that metal baguette cooking tray it made it a lot easier to transfer bread to oven. I use to use a linen baker's couche and the transfer board but the metal tray is so much easier I highly recommend it. I use it also to make short hoagie rolls as well, I can get eight 7-8" rolls using it, that is two rolls end to end per trough. I also use it for ciabatta rolls. Once you begin using it you will find other uses as well.

Hey John, I tried activating some yeast (dried in sealed sachets) which was rather old, 1st one at 40c as per your instructions, second one I also activated in a pyrex measuring jar at 35.5c floated in my sous vide machine, went into overdrive in terms of cell production, whilst my yeast was old (still worth a try) I always use a thermometer (as I also brew) worth mentioning that yeast strains differ greatly, so regardless check the packet (which I forgot to do as I was following & pausing your video) ,,anyway great success.
NOTE, if anyone buys summer fly traps that are filled with water & a mysterious sachet, (the sachets are not cheap) it is essentially cheap bread yeast & a yeast feed, works out cheaper to get the yeast feed at a home brew shop ;) ..keeps the area outside your door much clearer of summer fly misery (& a better kitchen environment.

Oh, they turned out great ebenso I think my dough was slightly too dry as we had 45 grad Celsius yesterday and also I used warm water for the starter and given the room temperature it was maybe a lot overkill for the yeast. Next round I will be a bit more intuitive on these parameters as I know now how the dough needs to feel in the different stages. Also I slashed them 4x before the last rise on my baguette tray and then I saw it’s supposed to be the last step. Despite these minor issues it went quite well and my family enhaled them. Will definitely do this on a weekly basis now ❤️
Wow! I'm an average bread maker, but these baguettes are the best thing I've ever turned out. I already had the baguette trays waiting for me to be bold enough to tackle the recipe, but you made it so easy to follow. Will be getting a lame for next time, although a very sharp bread knife did the trick. Thank you so much!

I have a perforated baguette tray and I love using it. I do the final proof in it after I slide the entire tray with baguettes into a floured cotton pillow case I keep just for that purpose.

Very interesting, I use a different technique that takes 8hrs proving, no folding. It’s a simple method but makes perfectly fine baguettes. I think I’ll give your method a try it looks wonderful
