      I tried making the dough and I’m actually very experience with this type of laminated dough and the wet ingredients were too much for 1 1/2 cup of flour I added less liquid and it was still too wet didn’t work

      @@JudyNiemeyer I actually did modify the recipe by adding more flour ab 30grams more and it really worked might need more flour but do not add too much , the danishes cone out just like the bakery and even better
      I also used plugra butter the best

    Cheese Danish!! I haven' had that since I left New York. I love Cheese Danish!! Definitely going to print out this recipe! All hat rollling and folding reminds me of the one time in my life I made croissants! They came out fantastic and were gone in a flash; they were so good.

    They are orgasmic! Can you freeze the dough? I would love to see a video on a batch bulk pastry. One where you turn it into various items like you do with your cookies ❤❤❤

    Why were there only 8 danishes in the end on the plate? Huh, Gemma? Did the Baker get to taste one before the viewers? Seriously, I think they could have had more cream cheese filling on them. I noticed you had some left in the pipping bag. They look great!

      The cooling rack could only fit in 8 😊 Not to worry, none were wasted. We had a nice snack after the shoot. As to the cream cheese filling, you can add more, or to preference. Hope this helped.

    How many eggs specifically do I need to put in the dough? Your video says 2 but your website says 1? About the filling, is 1 cup or 4 oz. Of cream cheese and is it 1/4 cup of confectioner’s sugar or 2 tbsp.? This recipe is really confusing.

    In the description box it mentions to add 1 egg and the video says 2 eggs which one is accurate?
    Also if I want to double the recipe is it still 15 by 8 dimension for rolling the dough?

    Can you freeze it if you don’t want to bake it all? If so how can I freeze it and how would I cook it after?

      You can freeze the pastry dough and just take it out when you want some. Let it sit at room temperature until soft enough to roll. Do not over handle the dough, to keep the butter in it from melting into the flour (to avoid a greasy pastry as a result).     Question: Would it be ok to shred frozen butter into the flour? I've done that before, put like a cup of flour in the "shredding container" (lol, does it have a name🤭). But I never made croissants myself, so maybe the process is different. Works great for biscuits (but of course you have warm hands, so not sure if that method totally works here). Looks delish🤤

      Yes, that can work too. Use frozen solid butter so it doesn't melt into the flour. Hope this helps.

    Would it be easier if the cream cheese is put on after the proofing and egg wash?
    Just curious to know why it is pipped on before proofing stage.

      The cream cheese filling is similar to that of a baked cheesecake. It also contains eggs. Hence, it's best baked to achieve that kind of flavor and texture. Very much like what you would add in a cream cheese brownies. Hope this helps.

    Hi Gemma, despite the process, is the result the same than croissant dough or it is different ? Is there more products you can do with this dough ? (I mean with a different shaping)

      It's similar but not really the same. But the result after baking is not a light and airy bread, instead you get light and flaky layers of pastry.

    What is confection sugar is?

      Confectioner's sugar is also known as powdered sugar. It has a very fine, powdery texture, and has cornstarch in it. It's used mainly for icing and for dusting pastries. Hope this helps.

    What is recommended to make a gluten free variant of this besides gluten free flour? I have not had a cheese danish in around 20 years no thanks to celiac disease, but I love being a mad scientist in the kitchen in trying to recreate gluten free variants of recipes. 😊
