I had given up on potato nacho cheese before I tried this. It was all the rave and I tried so many disgusting recipes. Yours changes my mind though. So good. We had it a couple of days ago on top of baked potatoes. So good! The leftovers are going to be mixed with some macaroni for lunch today.

so good, it sounded crazy to me too but for some reason potato & carrot blended together have this cheesy taste and it's gooey because of the starch in the potato. Gotta have that nooch too, though. I use a similar recipe for mac and cheese. An added bonus is that it's low in fat so you don't feel sick or bloated no matter how much you eat. Quite the opposite really ☺️

I have made this recipe a couple of times and it did not look anything like this. It was more like potato paste. Am I doing something wrong?
you either over cooked the potatoes and/or didn't blend it properly or long enough!
