Horseradish is a root like a dandelion Huge Root the leaves are loaded with niacins is the root. that's what gives the buzz. You can pickle it and that reduces the bus and burn from "hot" to mild. I think you can ferment it and that also controls the "heat". But if you're using it as a condiment put it in a little dish beside your plate and put a little on your fork load of beef. I guess it is an acquired taste nowadays. like most things because we are being groomed to hate food in general! ☺
I just remembered a good way to use horseradish, and I think you should give it a try…put horseradish in sour cream, but just enough so you can taste it without burning your nasal passages. Lightly roll cauliflower and broccoli florets, thinly sliced carrots , and sliced zucchini i flour. Fry in olive oil, slowly, until they are soft. Dip them in the sauce. It is a nice side dish, and if you do it right, you will like it. 🥦🥕🥒

Many recipes mitigate the experience by combining the grated root with sour cream or other dairy. I add a teaspoon or so to tuna salad. It's just the right touch. I like it. Poor Ron with that spicy horseradish! SInce both horseradish and mustard have a heat to their spiciness and flavor, I suspect that they were used as a digestive aid for rich or possibly fatty meats. I don't care for horseradish or mustard, either, but I love pepper, chiles, and ginger, which pack a similar heat, but I like their flavor better. I usually like to pair beef with roasted red peppers (sweet peppers), which is delicious!
Me, I love horseradish, probably because I grew up with it. I'm half Ukrainian (my Mom's side) and the red prepared horseradish goes with kielbasa amazingly well. At seafood restaurants in PA and NJ, we would top hard round oyster crackers with a small amount of prepared white horseradish and revel in and feel the horror of the vapors going up our noses into our brains. LOL! Glasses of beer helped calm the storm in our heads. 🙂 But, as you found out, Ron, you can't eat too much. It's overwhelming. Justine was smart to have it on the side of her plate.
