Notey shaak-Green Amaranth | Bengali leafy greens recipe

- নটে শাক (Notey shaak) is the leafy greens of green amaranth. Notey is usually eaten in Bengal during the warmer months. The red variant of this plant is known as লাল নটে (Laal notey) or simply লাল শাক (Laal shaak) not to be confused with a similarly red-leafed (ঢুলা শাক) Dhula shaak.
There are two minor variations to the notey shaak recipe that are made in our family. The first one is niramish (meaning vegetarian with no onion or garlic) and adds fried bori and peanuts. The second one uses a tiny bit of garlic to flavour the oil and skips the garnishes. Both very simple to make, the only part that takes a bit of time is cleaning and picking through the leaves. We have a similar version in Tamil Nadu. Only difference is we use mustard seeds instead of Nigel seeds, don’t use peanut or bori and when the leaves are cooked we sprinkle shredded coconut and mix well. This is comfort food. ❤️
In odisha we use mustard seed and shredded coconut..

@@murshidajahanmitu183 Hi! I had to really think a lot to suggest this. There are many many UA-cam channels for authentic Tamil cuisine because even within Tamil Nadu we have so many different types like Chettinad, Kongu region, Madurai, Tuticorin, etc. However, two of the channels that I follow are Madras Samayal and Revathy Shanmugam Kavingar Veetu Samayal. I hope you find them useful.
In Tamil, it's called as Thandang Keerai..which means stem greens...quite popular in Tamil Nadu. One of my favs too.
Exactly the same process my mother used to follow..she just adds a pinch of turmeric to get rid of the "buno gondho"..
The colour of the fresh shaak is so vibrant.. it is perfectly complimenting your orange dress in the background. 🙂

In Kerala, we call this Cheera.. and we use thr stems..the thicker stems sliced thinner than the slender ones. And ofcourse we cook it with grated coconut. Will definitely try your recipe too..it looks lovely..

Thank you for the wonderful recipe. I would like to share something. Cooking greens for such a long time in low heat can reduce its nutritive value. Instead cooking for short time in high heat preserves nutritional content better than former method. That is what we recommended in health care system-SL.

This is called माठ and लाल माठ in Marathi language. We make this with plenty of garlic, grated coconut and peanut oil. This is one of the few leafy vegetables that is safe to eat during the monsoons.
Here in Canada, you get this is Chinese supermarkets sometimes.

Notey shaak or green amaranthus is a favourite.I live in south India where they put finely chopped onion and garlic in this . Additionally I sprinkle some dry roasted and powdered panch phoron to make it flavourful.
Add coconut +mustard + green chillies paste to make it more wholesome, add kasurimethi & lime to make it exotic 😊
Each has a variation in their recipes..

But I think it would be better if you could give the measurements in teaspoon, tablespoons, etc despite gm. It's hard for me to get an idea from gm, neither I always have a scale near me. Anyway, thanks for the detailed measures❤
In fact gram measurement is the perfect way to explain a recipe.
Teaspoon/tablespoons/cup etc have different measurements unit in different countries.

Hey bong eats need a lil help, the dal bori that you used in the recipe which type is it like masoor, moong? Also any chances you may know where can I get such authentic dal bori in Pune? Plz do reply. Thank you ❤❤❤
Bengalis mostly use urad bori.. Search for a Bengali speciality shop, you will get all the three, matar dal, masoor and urad Boris.. If you don't get. Make at home very easy.. Simple pick, wash and soak urad or any dal you like.. Strain and grind with a little salt, some hing.. Pipe into small mounds on a clean plastic sheet. Sun dry for 2-3 days.. Be sure to cover with a thin cotyon cloth.. Store in glass bottles.. Use as required. You can use an oven after sun drying for 1 day on very low heat for drying it but taste differs..
