Pan Fried Cod Tongues - Traditional Newfoundland - Bonita's Kitchen

- Welcome to Bonita's Kitchen! Today we will be making Pan fried cod tongues, from fresh cod and rolled in a light flour mixture then pan fried. See recipe below!

Recipe:
Ingredients:
2 Pounds fresh or fully thawed cod tongues
½ cup flour
½ tsp sea salt
½ tsp freshly grated pepper
2 tbsp olive oil
2 tbsp butter
1 large frying pan
Method:
Carefully wash cod tongues and dry with paper towels. In a bowl or plastic bag put flour, sea salt and pepper mix together add cod tongues and roll or shake until evenly coated.
Pre heat frying pan to medium heat add 1 tbsp olive oil and 1 tbsp butter put each one in the pan carefully because your pan will be hot and only fry 6 or 8 cod tongues at a time.
Frying time depends on the size of your cod tongue, fry until golden brown and crisp, turn over the cod tongue and continue frying.
( estimated frying time is 5 minutes on each side )
Remove from frying pan let rest on a plater with parchment paper and Serve with a side of boiled potato or fresh bread, or a side dish of your choice.

Cod tongue is the best part of the fish !!!
We normally do them in milk, celery and pepper.
Fry them until they are half cooked, then make the milk, celery, pepper soup and then add the cod tongues and cook until gelatinous.
Cod tongue is my favourite food of all time.

This was the one recipe I was looking for! I have a friend who is from Newfoundland and we were talking about traditional foods. He mentioned cod tongues and I was like "What"? Not something I'd ever thought of eating!! 😁

A new comment to an old video. lived in Alaska for 19 years and never had these. I don't know how many cod heads I threw away....If only I would have known. On a brighter note, I ate plenty fried whitefish stomachs and the were very good. I am retired and live down in Florida now, but I miss the North country sometimes, but then I remember at my house it is 65F on Christmas....at your house.....well....not so good lol. WW Suwannee thank you for your new comment to one of my old videos and for visiting my channel, a lot of people toss out everything about the fish and only keep the filets but most of the fish can be cooked. The cods heads can be fried and boiled for stew, I guess that's why I started my channel to keep our traditional culture alive. We don't have it too cold in December here in Newfoundland maybe a small bit of snow, but we will take a few months for our visit to a warm country when the winter starts. Hi and Thank you so much for your message, here in Newfoundland and parts of the east coast of Canada you can buy cod tongues, but mostly for people in these part they go to the wharfs and what for the fisherman to come in and after they have cleaned their cod fish they would give them the cod tongues or the head for them to clean themselves. This is a delicacy for our elders here in Newfoundland, thank you again for your message. Bonita :)

@@bonitaskitchen - Most people like the small ones. I loved the great big ones .. LOL ... I cut 100's of pounds of them every summer growing up in Twillingate to pay for my school books. Cut my finger many times as well ... When Mom used to fry cod, she would only salt & pepper then roll in flour & fried it with tons of onions. God Bless you my dear.
DEAN DALLEY: Oh my that sounds lovely but a lot of work or sure, my Dad was a farmer and we spent our time in the garden. But I'm not a good gardener I've tried everything to grow vegetables and can't master the craft. But in the fall we would pick berries for our school books and that was a lot of work. In my family we had tongues and cheeks and we preferred the cheeks because they weren't jelly! I didn't know the jelly was the best part!

This is definitely the most dangerous food in the world! It is impossible to stop eating it! So it is recommended to have someone to kick you out of the seat after twenty tongues!
My mother used to make cod tongues AND cod cheeks with pork scraps over them. You call them scrunchons. Same thing. I like them both, but prefer the tongues. Do you ever cook "sounds"? I cannot find them any more. No one will take the time to cut them out. I haven't had them in years.

I'm not sure where in the States you would get them, if you know of a fish market close would be my best suggestion. Maybe someone else thats on here my be able to share a location with you.
