11:53 You can split bamboo with a Swiss Army knife (or for the daring, you can pull the stalks apart with your bare fingers)! Just lightly wedge the blade on an open end, and let gravity do the rest! If you press harder, you can get past the nodes, but in the case of the pulili sticks, this isn't necessary. It also seems like there is some spacing between each individual bristle (giving the instrument a tapered shape), so basically alternate between making larger and smaller bristles, and simply pull out the smaller ones (light sanding likely needed as bamboo is very sharp).
