Easy One Pot Thai Massaman Curry

  • Nok Suntaranon, chef and owner of Kalaya in Philedelphia, PA is here to teach you how to make massaman curry, her mother’s favorite dish and a Thai restaurant staple known for its velvety texture and subtle, rich flavors of coconut and warm spices.
    Nok explains that there’s nothing wrong with store bought curry paste- so grab some and get cooking. Her most important advice? Be patient. This fragrant curry comes together with a variety of ingredients, including coconut cream, tamarind paste, fish sauce, and spices like cinnamon sticks, star anise, and more.

    My all time favorite curry. Meaty, soupy, gravy-like, filling, salty, sour, textured, and really good on a cold and rainy day. It smells like perfections and theres nothing more my stomach craves than massaman curry. I love Thai food in general, but this curry is the peak of Thai food for me.

      @@alexsharp3481 I really messed up making a green curry lately (added way too much salt and fish sauce on top of that) and now I can't eat green curry. I'm it'll change the second I eat it again though. Making some massaman today though!

    Ever since I first tried massaman curry 20 years ago, my world literally changed. Every city I’ve moved to or visited ever since then, I seek out all the Thai restaurants in the area that make this dish. There have been a few places that just miss it, but more of the time it’s amazing

      Try Sri Lankan, it's even better than Thai. Nice and light and deep flavors. I do prefer Thai to Indian though. Indian curries are super heavy.

    It’s looks awesome I would love if you guys got her to show us how to make her homemade curry paste. If she’s cool with that. I like knowing how to start from the basics personally. I use the can already but my curry paste homemade never feels right. I’m a chef still struggle with some aspects of things.

      If you live in the us, it's probably not gonna taste as good as the store bought pashe. Because many of the ingrediants are not readily available. Even in thailand many people go out to the market to buy their curry pastes.

    Massaman Curry is such a hard dish to find good and a lot of trials and errors to make yourself, but damn is it so good. Also her curry is a tad bit to watery for my liking I usually let the starch thicken the curry more for a water down gravy consistency.

      you can do this recipe with only massaman curry paste and coconut cream/milk, of course it wont taste as complex but it will still be very good.
      If you want to step it up, cinnamon and star anise should be easy enough to find and you can usually find fish sauce in most supermarkets. For tamarind paste and shrimp paste it might be more difficult though but once you find them you can just store them in the fridge for a while. Don't be discouraged, the taste is worth it!

      You can buy red curry paste and add the ground spices to the paste. It won't be exactly the same but very similar. Maybe a little spicier than regular massaman

    Did you guys know that her name “Nok” means bird in Thai? The older generation Thai people name their kids sometimes after animals, things, colors, and after famous people they admire. Lol 😂 I knew a Thai lady named “Dang” which means red.

      So interesting fact, "Nok" is her Thai nickname her first name is Chutatip. We are given like normal name names? I guess would be the description. Like my father's nickname is (See Dang) color red, mine's is Mot (ant), and my mother's is Dao (turtle) however these are not ours and their birth name.

    I made this recipe, however using the suggested 2 tablespoons of shrimp paste absolutely ruined the dish. It tasted like shrimp paste soup rather than anything else. Foul.
    Other than that, the textures and consistency were great, so I look forward to trying again with 80% less shrimp paste.

    This is quite a bad recipe for massaman. It should not have shrimp paste (especially not 2 tbsp!!), less tamarind paste, she did not add any cardamom (which is the main spice), and in general this recipe is too liquidy. Not a good showcase of this dish.

    Living in mid-Missouri, I've never experienced curry. To me it's just a yellow powder. Is it a soup? A sauce? A gravied meat? What does curry mean? What about curry leaves? Why aren't they a part of the recipe? Curry seems so ambiguous.....

      The curry leaves originate from southern India and are mostly used in dishes from that area, the term curry applies to many types of dishes and usually involve a sauce and certain spices. Many different countries or regions have their own type of curry. The yellow powder known as curry powder is the most common in Western countries because it was originally brought back from India during British colonialism.
      Thai curries like the one in this video are quite different from most Indian curries, though Massaman in particular is the closest to Indian curries as it is inspired by it. There's so many different types of curries, you are right that curry is a very generic term but other than westernised appropriations, dishes are rarely named just "curry".

      To add one thing to what the other person said, curry just means "sauce". So it's equally as broadly defined as that term, only regional.

      if you put everything in one plate the rice will just absorb the sauce and then you'll be left with no sauce and very soggy rice
