    This is some good old stuff. Love pepper shrimp. My ears would be ringing and my nose would be running but I can’t stop eating until it’s done. Thanks for sharing

      Thanks Marie, The vendors create a huge batch of crushed peppers with salt and pimento leaves , they then boil that mixture and add the shrimp to that mixture.
      For a small batch at home like this one, it wouldn't be practical to do it that way. This version is great for just home personal consumption it also has more flavor due to the added seasonings.

      Yeah on the street they boil them like crabs but at home you get the real flavor

    The Shrimp is overcook,it becomes tough and rubberry.

      This is how Jamaican Pepper shrimp is made, not all cuisine are made the same way. It is not made the same way as a traditional shrimp dish.

      No. The authentic ones in Jamaica do not have food coloring. They are river shrimp, which naturally turns a bright red when cooked. However, when imitated in the U.S., recipes usually add red food coloring or sometimes even annatto to try to duplicate the natural color of Jamaican river shrimp.

    Seriously when I’m cooking with scotch bonnet peppers once it hits the oil that thing make me start coughing. It’s like start to tickle my throat

      Yes Genevae, this pepper is really potent. You have to be careful especially if you are sensitive to it.

      I make that mistake frying fish with scotch bonnet incld seeds.Never fry with the seeds.Lesson learn.

      I have seen it done on numerous occasions in Jamaica at shrimp spots . I know the river shrimp does turn a brighter red than the others , however not all shrimp sold at these locations are river shrimp. So to get that red color , coloring is added .I personally don’t buy the river ones because of the hardness of the shell.
