I just made this. I added cooked some broken up italian sausage, set them to the side and then put the tomatoes in. Recombined everything right before the oven. It was great. Wife loved it.
We’ve made and eaten this 3 times in 8 days. Between 3 adults it all gets eaten by morning, meaning a someone gets up in the middle of the night to get more!! Lol 😝 it’s a winner winner baked ziti dinner !! No mess and easy peasy! ❤️❤️❤️
Baked ziti was my go to growing up in Chicago, and this looks perfect! Easy enough to cook for the kids on a weeknight after a long day at work as well.
I have made this several times. It has always turned out great! My whole family loves it! P.S. I use a well seasoned cat iron skillet (not an enameled one). I have used a skillet with “regular” sided, but have also used a deep skillet, with taller sides, which makes it much less likely that I will spill some on the stovetop (I am not careful enough when stirring). P.P.S. I have also used penne pasta (penne and ziti are the same diameter. Ziti is cut straight: penne is cut on the bias. Other than that, they are the same.)

it can also give an bad to the food, and generate a funky smell in the kitchen. i've had that problem. most people have other cookware they can use instead. i have a cheap $20 enamel cast iron dutch oven from Cost Plus that's perfect for these situations

Looks delicious. Question: I've used this exact sauce as a simple pasta sauce before. It's fresh and awesome. But I always get lots and lots of little tomato-skin tubes. I cook grapes tomatoes in very hot oil. Any recommendations? (I do actually see some skins here and there in your pan on second viewing.)
You can briefly add them to boiling water then shock in ice water to peel the skins if you think the extra effort is worth it to get rid of skins. Or buy canned whole peeled tomatoes.
Not if it is properly seasoned to begin with. There's no problem with tomato dishes unless you are letting it simmer for an hour or more. After a dish like this, simply wash it out as you would normally do and end by drying it on a hot burner, followed by the usual light coating of oil as it cools down. The pan he is using is also an enamelled cast iron skillet, so there is no seasoning to worry about in any case.
What about ricotta? Looks good but I would add ricotta when I added the other cheeses. Also some Italian seasoning. Not alot of seasonings in this original version. Seems like it would be kinda bland.
Unfortunately, I had to pass down my favorite cast iron to our youngest. It's just too heavy for me to handle these days. But, this recipe does look GOOD! Growing old ain't for sissies.
@@James_Johnson79 On the ATK site, they tested this and the takeaway was that it's OK to cook acidic foods in cast iron so long as it's for under 30 minutes in a well-seasoned pan. Otherwise, there is a metalic taste.

I used Banzo chickpea ziti. The back of the box said to only boil the pasta for six minutes if you’re baking the ziti. I followed those directions and it came out well. Not sure how other gf pastas would work.

It's totally beyond me why an experienced cook would not even mention/address/reassure the viewer about the consequences of the first step of this recipe, cooking an acid ingredient for ten minutes, by itself, in a bare-surfaced cast iron pan, while continuing to cook that ingredient as a main part of the dish for the remainder of the recipe. Any cast-iron enthusiast would wonder about that issue.

I went into Subway today to get a healthy sandwich. The older lady behind the counter helped me and started preparing my sandwich for me. She out of nowhere fell to the ground and started convulsing and shaking. the other teenage girl there just stepped over her and finished up my sandwich as the lady lay on the ground shaking. The two teenage girls that work there just laughed it off and said "Oh, she does this all the time." I peeked over the counter to see the lady foaming at her mouth. I then paid for my sandwich and left the establisment.

I think if your pan is seasoned it shouldn't be an issue.

His pan is a Le Creuset enameled cast iron. It is not raw cast iron, but on the enameled inside as well as the outside. Excellent pans.
