One thing I learned from JJR at Man about Cake: for fruit flavors you can also use freeze-dried fruit powder (I get it from amazon). So far I've tried it with strawberry, raspberry and banana (though I didn't really care for the banana; they seemed too ripe for my taste). It works really well and doesn't mess with the consistency.
If you want to add a stronger strawberry flavor without thinning your frosting here's an idea: Place some freeze-dried strawberries in a food processer and pulse till the strawberries are powdered. Then add as much strawberry powder as needed to make the frosting as strongly flavored as you like. Just make sure to use freeze-dried strawberries, because dehydrated strawberries won't work.
I just made this frosting on Monday for cupcakes and it turned out beautifully! I really love the fact that it can be adapted to any different flavor, thank you for the recipe ❤️

Hello Gemma! I love this video! You're crazy series is my favorite! I must tell you that you saved me with your original frosting recipe. Oh Gemma! Before I found you I had tried to make my own frosting and let us just say it was always an exercise in futility. I really started to have a phobia about making my own.😨 I am not joking! I once made a whole batch of lovely vanilla cupcakes for my godson Christopher . I had what I thought was a easy recipe for buttercream frosting which ended up tasting like whipped butter. I had to trash the whole thing and run to the store at 11:00 at night and buy the kind in a can. I don't like to feed this to my beloveds because of the ingredients. After a few more tries with different recipes I gave up. That is until I met you! Now you have a crazy recipe! I am in love with all of the flavors! You have really picked the best ones. As I was watching I was thinking of each person that I would bake it for.( I also thought that there are no good mint extracts except for the one that you showed us how to make. That is the only one that really taste like mint. I am not just trying to butter you up ) anyway I am sorry as usual for going on and on, but I am so excited about this and cannot wait till next week for the Neapolitan cake, but more importantly to celebrate you. Actually I have found all of my clients prefer melted chocolate to cocoa powder in chocolate frosting. Hope that helps anyone who doesn't like the taste of chocolate frosting with cocoa powder.

Just use orange zest instead of lemon zest. I use juice instead of the milk too, but then you can't make all the different flavors from the same batch.
1½ cups (340g/12oz) butter, at room temperature
5⅔ cups (680g/1lb 8oz) confectioners' sugar, sifted*
2 teaspoon vanilla extract
2-3 tablespoons milk or cream
pinch of salt
Add Ins:
Strawberry Frosting:
1/2 cup (21/2oz/75g) fresh or frozen strawberries, pureed and strained
Chocolate Frosting:
1 1/3 cups (51/3oz/160g) cocoa powder
Coffee Frosting:
1 tablespoon instant espresso dissolved in 2 tablespoons of water
Mint Chocolate Chip Frosting:
3 teaspoons mint extract
1/2 cup (3oz/90g) chocolate, finely chopped
1 drop green food coloring (optional)
Peanut butter Frosting:
3/4 cup (6oz/180g) smooth peanut butter
Vanilla Frosting:
2 teaspoons vanilla extract , total for the batch.
Lemon Frosting:
•Zest of 2 lemons
