🥞Fluffy Pancakes with Vanilla Cream | No talking recipe | Homemade Goodies

INGREDIENTS:
For vanilla cream:
egg yolks 2
sugar 30g | 1/4cups
cornstarch 30g | 1/4 cups
milk 300ml | 1 1/4 cups
vanilla extract 5g | 1 tsp
For pancakes:
eggs 3 (separated)
milk 240ml | 1cup
flour 200g | 1 1/2cups
backing powder 8g | 2tsp
sugar 50g | 1/4cup
Extra (optional) :
fresh berries
powdered sugar
How to prepare:
1. In a milk pan add 2 egg yolks, 30g sugar, 30g cornstarch and 1 tsp vanilla extract and whisk everything until it becomes a thick cream.
2. Add 300ml milk which can be hot, warm or cold. I’ve preheated the milk in the microwave for 2 minutes.
3. Put the pan over medium-low heat and whisk constantly until the cream becomes thick and smooth.
4. Remove vanilla cream from the heat, transfer it in a clean bowl and cover with plastic foil to prevent forming the crust. Let the cream to reach room temperature. When needed, mix it whit a spatula to become more creamy.
5. To make the pancakes, separate 3 eggs.
6. Mix the egg yolks with 240ml milk, 200g flour, 8g baking powder and 50g sugar until everything is incorporated.
7. Using a hand mixer , mix the egg whites until they become stiff and fluffy.
8. Gently incorporate egg whites into egg yolk’s composition. Mixing the egg whites will add extra fluffiness to the pancakes.
9. Bake the pancakes over medium-low heat for about 1 minute on each side.
10. Add vanilla cream between pancakes. I’ve used 3 pancakes per serving.
11. Decorate with fresh berries and powdered sugar and enjoy!
