As a pastry chef in-training, listening to you discover how fiddly chocolate is was a delight. Fun fact: the door to the chocolaterie of a bakery always. stays. closed damnit. If you let it stay open you mess around with the humidity, temperature, airflow... Can't have that.

“You may fascinate a woman by giving her a piece of cheese.” The spell comes from Kathryn Paulsen's 1971 book, The Complete Book of Magic and Witchcraft
Fun fact: the mars company has a specific ratio of m&m colors that they claim to follow, and they aren't lying. My high school statistics class did a chi-squared analysis that found that there was a chi-square value of about 70, which means there is no statistical difference between the observed and expected values.
I feel like the fridge model still has a lot of promise with professional kitchens/bakeries. Compound chocolate is more stable, and it can taste good, but chefs/bakers can be pickier when it comes to taste.
I'm not sure why but I cannot stand compound chocolate, it physically makes me sick. So I'd love one that was built in a fridge. I was thinking, what if you had a fan blow a stream of supercooled air (from liquid nitrogen or something) at the chocolate in a regular enclosure, rather than fridging the whole thing?
It did seem like a great design, just hard to get people to get (ie momentum/reputation is hard to get from nothing) and/or the market isn’t *too* huge. I would 100% have one or more in my Dream *Giant* Makerspaces’ Culinary (or Confectionery?) Section.

Any way to control how sugar crystallizes? I am *thinking* of something like a Cloud Chamber or Bubble Chamber, but idk if Sugar can be supersaturated like that and/or be able to be initiated by UV Light (or Ionizing Radiation in General)

To be fair the biggest issue with food safety for 3D prints isn't the material but the surface which catches bacteria, fungi etc. in between the layers. Unless it uses toxic pigments or additives basically all plastics used in 3D Printing (ASA, ABS, PLA etc.) should be safe. Easiest method is usually to get a food safe epoxy to coat the prints.
I coat mine in Shellac so i get that Extended Release effect from my Microplastic API of Choice (/j Obviously, idk if shellac would work to be honest, might be okay)

Now you just need a multi toolhead setup with a paste/filling dispenser. Have the printer print the outside out of chocolate and then fill it up automatically. Also what if you do put an enclosure on it and keep it at a constant temperature, that might make it more reliable with changing room conditions. Maybe if the chamber can just keep it cool, not to the extent of a mini fridge, then maybe it would print better.
