Love this recipe! A tip for anyone who doesn’t have a candy thermometer to make sure the sugar is at about 300 degrees(hard crack): stick something into the sugar and dip it into ice cold water, if it is crunchy it’s done, if not, keep cooking it. Hope that’s helpful!!
I have a candy thermometer, but the brown sugar burned before it could get to 300°. How can I avoid it burning?
Did anyone else notice how he tried to pick one out of his cup of pecans in the beginning but they were stuck lol

Yes I sure did, it was an oops now I’m just watching for Curiosity, I have been making glazed/candid pecans for decades, good lord I need to teach you preppy. But hey your great just not in the pecan category,back to the drawing board preppy you can do for sure. Get out that bourbon,put that water away for starters. :)
Excellent starter recipe.🥰 It helps to bake the pecans first at 350 for about 10 minutes. Also add about 3 tbls of maple syrup and 1 tbls of bourbon into the sugar mix and use a thermometer to get to about 310 degrees
Everything this guy makes is out of proportion. He makes you believe his beautiful kitchen means he knows what he's doing, 1 cup sugar is EXTREMELY sweet for only 1 cup of pecans by all means.

I made this recipe this morning and it came out perfectly. The only glitch was that here in Portland, OR we have high humidity and today was one of those days of dismal drizzle, If they are still sticky tomorrow I will put them in a warm oven for a bit.
Just made these to use in a carrot cake.
First time making these. This caramel is super hot and messy if it gets on any part of the stove or counter. So I suggest a wet paper towel to quickly wipe off any drops. They are delish! Love all John’s recipes.

You should roast the pecans first. They taste so much better.
The heat of the sugar (300-310 degrees F) is doing exactly that. I would try this once with a few of the pre-roasted pecans because I'm afraid that the sugar temp would burn them. Please share how this goes for you.

Just made these for a cheese board, wish I hadn't tried them cause now I wanna eat them all! So addicting! Mine got cloudy though and they don't have that glassy look. I definitely took the coating to the hard-crack stage though because they crack.

Thank you so much for this really easy recipe....My first batch came out great, but my second batch was a little stcky....I think I didn't add enough pecans...added more for the last batch and they came out ok, but still sticky.... what could I have done?
I skipped all the optional spices as I have none in my kitchen. However, combination of pecans, cinnamon and brown sugar is soooo good!!! Honestly everyone has to try to make these candied pecan. And oh yeah, I lightly baked these pecans before cooking it.
Oh my god they were so good and I had sugar leftover mixture so I added peanuts to it but I was wondering my pecans did not dry stayed sticky. I even put them in the fridge to see if that would help but it didn’t. Can you tell me may be what I did wrong? The peanuts however came out fine be dried up and they’re really good. After writing this I re watched your video and realized I must've taken them out too soon and didn't reach the right temp. Love your videos and you. Happy New Year!

Mine are sticky. I was scared it was going to burn. Next time I’ll use a thermometer. And more cayenne pepper. Still good
