- Pickled Potatoes
Ingredients
2 lbs small potatoes
1 Cup water
1 Cup vinegar
1 Cup olive oil
Medium onion diced
3 tablespoons chopped red pepper
3 tablespoons green coriander
1 spring onion
2 tsp Salt
1 Teaspoon black pepper
1 Teaspoon paprika
1 Teaspoon garlic powder
6 cloves garlic
Cooking Instructions
1 Boil the potatoes for 25 minutes or until you can stick them with a toothpick.
2 Let them cool.
3 Mix all the ingredients except the potatoes.
4 Make holes in the potatoes with toothpick.
5 In glass jar put the potatoes then pour your mix on them.
6 Cover it, put in the fridge for 24 hours.
I like the color of the brine. Might be good on a relish tray as an appetizer. 😋
