      The big thing about msg is that it sometimes gives some people headaches, and one person wrote a article saying that they get headaches each time they eat Chinese food. And it’s sucks because for most people they will be fine. Like I get migraines from BBQ Sauce. You don’t see me bout to write an article saying BBQ Sauce isn’t good.       well yes but his information is still uncorrected because he probably doesn't have enough background knowledge to tell when a study or paper is flawed. society has a huge issue with deliberate dietary misinformation and lack of experts since no doctors ever learn nutrition (just one week or something, where they learn only the proven to be wrong guidelines). try finding an expert who understands both nutrition and the biology of the human body plus the necessary chemistry to understand the interactions of substances... yes good luck there probably aren't many people like that

    You can tell this man is a university professor. Every source he’s ever cited was of a highly credible and extensively researched source. I’m glad for the success Adam has been receiving! He’s played it perfectly. If people in the future want to know how to *correctly* make a living on UA-cam, Adam is the standard.

      Refined vegetable oils are bad for you though. As bad as sugar. Never eat refined carbs and also never eat refined oils.

    For what it's worth, after dramatically increasing my fat intake using almost exclusively saturated fat, my total cholesterol did go up a fair bit, but the increase in HDL was far higher than the LDL and put it into a healthy ratio for the first time in my life. My triglycerides also fell through the floor, but I believe that was more likely due to cutting almost all carbs, and all sugars.

      also consider that you are likely eating less in volume. Most foods that are naturally high in fat are also high in protein which is dense and filling.

      Not all fats are created equal in regards to HDL and LDL. Cis fatty acids increase HDL, saturated fats increase LDL, and trans fats both increase LDL and decrease HDL. It’s not always about overall fat consumption, but about which fats.

      I parked in the hospital garage and had to carry my lights and everything like five blocks to the public health building and then it started pouring rain while i was doing the interview and i couldn't go back to my car for like two hours and none of this is interesting but i just mean to say that i was near your hospital for a very long time and it seemed very impressive

      LDL isn't actually as amazing of an indicator of something like high risk of stroke as once thought. I think the big indicator currently is HDL to triglycerides ratio. A huge number of people on keto will actually have a high LDL, but all other factors of metabolic syndrome and risk of stroke and heart attack improve as evidence by either Jeff Volek's or Stephen Phinney's research. Both might have been involved; I don't quite remember. Eat that butter, fam.

    Both of my roommates have suffered from orthorexia (the obsession of eating well and counting every calorie and macronutrient) and have avoided fats and carbs as much as they could to avoid getting fat or ill. Unfortunately, one of them developed an acute form of bowel inflammation, because eating absolutely no fats for a long period of time meant she couldn't absorb many vitamins and it made her ill anyway. Ironically, this meant the only thing she could safely eat without having terrible cramps or worse were mostly fats, the thing the body needed to function, so her cure was a true ketogenic diet (together with targeted anti inflammatory medicine). She's ok now, she can eat a more balanced diet after recovering and is honestly happier than she doesn't count every calorie and type of food.

    Makes me angry that the low fat, high carb diet is being taught everywhere in school. Misinformation from that smear campaign by the sugar industry has blinded everybody into not eating fats. Wonderful presentation, Adam!

      Low fat high carb diets DO still have their place for Athletes, bodybuilders, and anyone performing any level of strength training. Why do athletes eat lots of carbs but remain lean? Simple. They need the quick energy burst that only carbs can provide for building muscle and running further. Ask any gym bro on a low-carb or keto diet and he or she will tell you they perform much better when consuming a high-protein high-carb, low-fat diet. I know I do.
      But for most sedentary individuals just trying to keep weight off, I would argue a low-carb diet IS superior. You will feel satiated longer, you won’t spike your insulin levels nearly as often, and you will have more consistent energy levels.
      One thing we can all widely agree on is the Standard American diet containing a high amount of simple carbs from added sugars is whats causing the obesity pandemic. If Americans as a whole made some marginally more reasonable dietary choices such as swapping out breakfast cereal with eggs or whole wheat toast, replacing desserts with fruit or yogurt, and cut out all sugary drinks, and maybe eating some leafy greens every once in awhile, we would be significantly healthier with only minor changes to our diet. We have a tendency to make make a waaay bigger deal out of an individuals diet than it needs to be for simply staying healthy.

      You can be healthy on a high-carb diet. However, you just need to stay away from SIMPLE carbs. Complex carbs found in many foods such as oats, whole wheat bread, brown rice, beans, sweet potatoes and vegetables are all good choices. Simple carbs such as sugars (especially with no fiber) will cause huge blood sugar spikes followed by a crash, and that is what causes type 2 diabetes and heart disease.

      @@circletech7745 only at a high level carbs may be good for performance (but not health) and bodybuilders just want to be enormous so of-course they need to eat a lot, a lot of junk food and drugs too but if you want to have lean natural muscles lasting all your life low-carb is the best.

      @@tobbe3574 yes, as grains still contain starches which get converted to sugar, and long term consumption of them has detrimental health effects. Although the carbs are not the only culprit within them. Grains are not healthy for many other reasons.

    I recently found your videos and I'm loving them. I didn't want to watch this particular video because I thought it was going to be an ode to keto, saying things like you should worry more about the sugar in carrots than the calories in butter.       Those are two totally different things, though. Salt is a mineral, and there is no such thing as different salt, it's just what OTHER stuff is in among the salt that makes it a specific type of salt, or how it was extracted which effects the size of the crystals. Pepper, on the other hand, is from a plant, and there are different color peppercorns with slightly different tastes.

      Yes but many people say that some salts are better for you than others. Also peppercorns have piperine which has health benefits so it would be nice to know which variety has higher concentrations.

    Always important to remember higher cholesterol (both HDL and LDL) is related to longer life and lower risk of heart disease. He mentioned triglycerides so I'd hoped he'd make a note on this(all studies that control for triglycerides come to this conclusion)

    thank you for shedding light on this we've been lied to so many times by big business who affect the gov't to such an extent that they issued bad advice in the past and even though some of the facts are still out to jury, they seem to be truly being addressed at this time in history.     as a fellow layman I feel like what makes Adam's videos great is the academic spirit behind them.
    Sure, citing papers is important, but it's equally important to know the tools for critical thinking and being able to parse information based on things like corroboration, suspending belief, and most of all, being aware that you are a lay person.
    I'm not saying us lay people have to bow down to scientists, more like not being insecure about now being sure about something, and pursuing things thoroughly enough that you see the various strengths and shortcomings of a variety of hypotheses and theories.

    I really admire that you make an effort to educate your viewers about the food they eat rather than just following the "easier" route to be another cooking UA-camr who just makes food while filming it artistically. Don't get me wrong, I love that content as well, but videos like this one have a public health good even though they are harder for you to monitize via sponsorships and that is definitely something to be lauded.
    You're doing it the right way Adam -- Keep it up!

    CRISCO is short for crystalized cotton seed oil. This was made when the use for the cotton seed oil did not pan out. So Procter and gamble came up with this refined product and heavily marketed it as a healthier choice for lard.

      @LagiNaLangAko23 It's a highly-processed artificial fat source. There are no RCTs performed on humans that say either way but we do know other like artificial oils such as canola have negative effects on mice. You can make your conclusions from this. I personally stay away from all and every vegetable (seed) oil. I only consume fruit oils such as avocado, coconut and olive long animal sources of fat.

      @se fi Yeah there's nothing wrong with ditching yolks to make whatever you're adding eggs to more focused towards protein. (Which is probably the all around best macro for me personally)
      Fat is fine and good, but just because it is doesn't mean we should eat it at every chance we get. I do the same thing as you for that reason, probably only use half of all eggs with yolks.

    Saturated fats do raise LDL levels, but high LDL levels aren't necessarily a pathology. In older people high LDL levels were a predictor of longer life.

      That’s because cancers and diseases that kill older people literally take cholesterol out of their blood. So that correlation is very misleading.

    Carbohydrates naturally come with fiber, which blunts the blood sugar spike. Remove them and you’ve got your spike. Most tests on those ‚simple‘ carbs are done with sugar dissolved in water (think soda). But adding fiber back in can show similar blunting of the blood sugar response. So topping pizza with veggies or having rice with a side salad very much helps blunt the effect. And for some reason cinnamon seems to work too.

    No mention of the (potentially) harmful effects of oxidation of polyunsaturated fats when used in high temperature applications like frying?

      This also applies to olive oil. It's actually not a frying oil, since its unsaturated fats gets turned into transfats with the same effect as saturated fats at certain levels of heat. Guess Adam isn't as smart as everyone here declares him to be.

      @Sheikh_Shaq This video was very basic and he didn't break down the science at all, he just pointed to poorly done epidemiology. I have no doubt the average person is significantly more intelligent than you are.
      Put 2 and 2 together, why do countries who consume massive amounts of vegetable seed oils have the highest rates of heart disease?

      @BattleEmpoleon He can cite all the epidemiology he wants, at the end of the day they're just surveys. Most people can't even remember what they had for breakfast two days ago. You don't get much randomized clinical trials in nutrition because most experiment ideas are deemed unethical.
      Lots of sugar is bad for your liver and can cause insulin resistance so I agree that sugar may be a contributing factor to heart disease considering most people who develop heart disease also insulin resistance. You know what also destroys the mitochondria of the cell and causes insulin resistance and chronic inflammation? High PUFA vegetable seed oils cooked at high temperatures.

      @@james__anna_burns4885 Similar to olive oil, not ideal but much better than vegetable seed oils. You want to avoid oils high in omega-6 Polyunsaturated fatty acids (PUFAs). I'm sure peanut oil is fine but butter and good quality tallow would be better.

    As a former vegan, specifically one who used to follow the high carb low fat diet, I can personally say that one of the best intuitive decisions I’ve made was turning away from that diet and incorporating more healthy fats into my life. Nuts, seeds, fish, and eggs. Never knew how important they were until I cut them out. Always thought fat was the culprit- I fully believed the whole “fat makes you fat” theory. Cutting out fat was detrimental to me for a lot of reasons, but I would say the main symptoms I experienced from eating high carb low fat would be that my hormones were all out of whack, my skin was pale and covered with acne, and my energy levels were nonexistent. If you are eating a low fat diet and not feeling well, I urge you to try to eat more intuitively and add more healthy fats back into your diet. I got to a point where I was getting sick for weeks and months at a time. Simply changing the way I eat has really helped me feel more like myself again 💕 I’m glad you’ve debunked this theory. I hope this video reaches those who need it most

    Thank you for producing this video; a handful of folks I've spoken with about weight loss cannot believe that fat can be nutritious. It was also great of you to include and clarify information which is being formulated. Everyone's needs are different---but I was thrilled to discover that I'd never have to settle for margerine again.

      Fat also takes a lot longer to digest, so it has the benefit of leaving people satiated, where as high carb foods process quick, and then people feel hungry and snack between meals.
