Hi Sisters. Bonnie here from Cali. My mom made delicious chicken and dumplings. She made it from scratch too. Her dumplings were more like drop biscuits on top of the broth. Maybe the recipe was out of Betty Crocker? I do love this style of dumplings better! God bless you all! xoxo
In North Carolina, we call it "Chicken Pastry." My nana taught my mother and myself, how to make Chicken Pastry. She always used a fresh hen instead of a regular chicken. She would clean and wash the hen in cold water. We always used the largest solid bottom stock pot in the kitchen. She would cook the hen using only salt and pepper to season the pot. Then, removed all of the hen which was cut up into parts,when the hen was almost falling apart. She didn't take the meat off the bones. So, everyone could have their favorite part of the hen. It takes a hen just a little longer to cook than a chicken. The hen produces a richer broth; which has a natural golden hue. It didn't require any chicken flavored base or bouillon. However, she would taste the broth to make sure it was seasoned well. Nana and my mom made their own dough and pastry strips, too. But, they didn't use butter. They made their dough with Crisco shortening. (Now, I just buy the frozen pastry strips, from the grocery store. lol) The hen produces enough seasoning to season, the pastry on its own. The broth would be brought to a boil. Then, the 3 to 4 inch pastry strips, would be dropped one at a time; until all the pastry was cooking. The hen whole pieces would be added back to the pot, after the pastry was almost done. This is way most native North Carolinians make "Chicken Pastry." Even, the restaurants, called it Chicken Pastry. Now, my family also make Chicken Salad with a hen, too. A nice hen gives better flavor and more meat, too. For four generations or more, we have been using a fresh or frozen hen for Chicken Salad and "Pastry." (Some, people actually just say "Pastry,," when referring to Chicken Pastry.) lol. The beauty of this is you freeze all that rich broth, you get from cooking the hen for chicken salad. We use a huge Tupperware container to cool and freeze the hen broth. Then, the next time you need to cook two batches of pastry strips or stretch the recipe you've go plenty of hen broth. Some, family members just want "pastry" and no meat. So, keeping the broth from chicken salad was the remedy for running out of pastry at large family dinners. The babies and toddlers loved to eat pastry; in my family. I enjoyed seeing how you make your mama's Chicken and Dumplings.

Are you sure it wasn't "Irish Potatoes" you were trying to say.....and your mind heard it as "Ice Potatoes"? Growing up we called white potatoes "Irish Potatoes". My mama just passed away in 2022 at 92 years and I can't ask her, but.....I bet it's because of the Irish Potato Famine back long ago. ALL they had to eat is potatoes! I'll have to look that up! I love dumplings have never tried to make them scared i may end up like Sis Pam or worse. But we had a potluck at work and one of my technicians made dumplings that were good but whenever we asked how she made the dumplings she would just laugh...........well she had actually used flour tortillas. So if i make them that may be my route or flatten some biscuits but it won't be homemade for sure.
