How to Make Turkish Tea

  • Hello! My name is Melek and this is a small passion project I am pursuing whilst on annual leave from my job as an academic. I would like to use this platform to honour the important women in my life- my mother and mother-in-law, sisters, aunts, cousins and friends- by breathing life into their recipes that have nourished me at some point in my life. While some of these recipes are unique to them, most were passed down from their mothers who in turn inherited them from their mothers and so on.
    It is this intergenerational transfer of recipes and their ability to travel across time and connect us with our elders that enchants me most about family recipes. And in sharing these recipes with you, my hope is that their reach will extend into your family home and nourish you too.

    Recipe for Making Turkish Tea
    Ingredients:
    -4 tablespoons Turkish tea blend (I like to combine 1 tablespoon of Earl Grey tea leaves with 3 tablespoons of Turkish tea blend)
    -Water
    Necessary equipment:
    -2-piece teapot OR stove top kettle and porcelain pot
    -Strainer
    Method:
    -Add your tea blend to the smaller pot, rinse for a few seconds with water and cover lid
    -Fill larger pot with water and put on the stove with the smaller pot placed on top and let the water come to a boil
    - Transfer some of the boiling water from the larger pot to the small pot
    - Refill the large pot with more water and return to the stove to let it come to a boil once more
    - Reduce the heat to low and let the tea simmer for a further 15 minutes or until the tea leaves in the small pot have sunk to the bottom
    - Pour 3/4 of cup with the brewed tea and 1/4 of cup with the boiling water
    - Loveliest when served in a traditional Turkish tea cup and saucer

    Thank you!! My husband is Turkish and I've never found clear instructions on how to use the tea kettle. Finally I will be able to make it confidently when my in-laws come over.

      Inlaws? 😁 You might want to buy a Samovar for that dear. The idea is the same only you got more hot water to pour into the teapot, add more tea leaves and return it back onto the simmering water in the kettle. That’s how tea serving is handled in eastern world Cafés. DO NOT add cool water to the kettle unless you want to serve more tea later or because not much was left to create steam for brewing. Brewing time takes between 12 to 15 minutes only. Cool water will kill steam resulting in longer time till full brew was reached.

    I am so excited to use it.

    Sweetheart, you don’t need to refill the bottom kettle unless you want to serve more for later or you have more people to serve tea for otherwise just lower heat to low and return the top teapot back onto the kettle and brew the tea for 12 - 15 minutes. Steam would still reach the bottom of the top teapot. So no worries .. as you don’t have got to wait for almost an hour just to have a cup of tea, darling. Hugs to you for you been doing this for ages. 💐

    Lovely! ❤ We do it slightly different, but the main difference is I suppose that Mom and Dad told me to always wait about 15-20 seconds after the water has boiled, before having either come in contact with each other.
    The idea is that you don't boil your precious tea leaves that way :)
    Enjoy!
    When using mulched leaves, they said, wait until it all sinks. That way you know its completely soaked up as much water as it can.
    They say you're too early if it's still floating 😊

      In hindsight, I suppose both ways of preparing (yours and theirs) must have a similar effect, given that you add boiling water to warm water, surrounding the tea leaves, which is essentially protecting the tea leaves from giving off a bitter taste. Interesting.
      I wonder what effect it will have. Habits are hard to break, I'll probably keep with my habits, but I really appreciate yours!

    Thank you for this. 9.9/10. I would have said 10/10 but the background music was truly annoying. We visited Turkey a few years back and I brought tea home. The pots fascinated me. That and the ceremony of making and serving tea.

    I share the same love for Earl Grey 😂.
    Doğuş earl grey is amazing. We don't get it here in Dubai. So I pick up everytime I am in Turkey or order online which costs about 4 times 😂 but tea is important 🙂

    I live in the United States. What would be the brand of Turkish tea that you would recommend. There are some international markets in my county but I could also buy my tea through Amazon.     Very interesting and inspiring sister. In fact, I have just purchased the *Çaykur Rize Turist Çayı* (as I'm a beginner), which brings me to my question:
    When opening the packet... is it necessary to remove the small dust/dirt-like pieces with a strainer and washing the remaining loose tea before brewing them (or before you put them in a container)?
    Or are we allowed to use the tea straight from the packet? 🤔
    Because different people tell me different things, which has left me so confused. 😭
    So I would REALLY appreciate your response. Thank you. 🙏🏼 ❤

      I’ve been brewing tea since I was 10 and I don’t strain it, I just brew the tea right out of the container. My family’s from the region tea is grown so I don’t doubt my tea brewing skills!

    Wait a minute after the water boils. Do not pour boiling water on Turkish tea leaves. Then keep the heat very low in the bottom pot.

      Hi there! You’re likely to find a double teapot at most Turkish grocers but a couple that come to mind are Kahvecioglu Grand Foods in Campbellfield and Tek Foods in Somerton. Good luck 😉

      I like to use TWG Earl Grey Gentleman tea leaves (as seen in the video) if I’m feeling particularly indulgent, but oftentimes I just use Twinings Earl Grey tea bags (just one bag will suffice) 🙂

    U don't rinse the tea leaves with tap water. That's not how Turkish tea is prepared .

    Why add Earl grey to Turkish tea leaves? It is not necessary to mix, flavors, you temper with the authenticity of the Turkish tea.

    Aren't you washing away a good portion of the tea's caffeine when you wash the leaves? Are you using cold water to do that? If so I suppose it wouldn't take as much away as hot. But, of course you know what you are doing, and I am just some guy on the internet haha. Listen to me trying to comment on Turkish tea made by an actual Turkish lady. My apologies

      Sweety, it's easy just get two Teapots, one small and the second large, and put the small on top of the big one. That's it sweety....

      I live in California too and I believe you can find a Turkish market near you if you search online. We go to the one in Burlingame but that’s probably too far for you. I’d suggest looking online for a store.

      Hi there- Turkish tea does contain caffeine and some varieties are stronger than others so it might be best to discuss with you doctor or midwife 🙂

    So the leaves have to be WASHED first w cold water, leave and sort of semi wet cooked in the top kettle, then once water boiles, fill up the top kettle w boiked water and makenit simmer for more time....hummmm that is some long time to process tea....

    That tea should not take more than 10 minutes to make , just boil some water in a pot, pour over tea, let it steep for 2 -5 minutes, and the tea is ready

    Quite a dumb way to make tea. Usable only if you want to really make tons of tea with very few leaves. And the washing and storage for that ugly utensil is nightmare.
